I’m a little sad to end this fun weekend, but it was such a wonderful weekend and pretty good, but busy, week. I did try to get more creative with eats this week starting with a delicious beans and rice dish Ron made for us one night, the leftovers were great re-heated in acorn squash, a huge, colorful salad with kicky avocado dressing, a tasty marinara tofu couscous sauté, and kicky enchilada tofu stir fry.
It’s really starting to feel like fall here with temps in the 70s, clear, and a crisp breeze. And fall is starting in Midtown Sacramento, all those leaves turning is such a gorgeous sight!
There was also a simple meal salad using up what fresh ingredients I had paired with canned ingredients and a delicious Impossible Burger chili Ron made tonight with Daiya Cheddar.
Friday hubby and I stepped out for lunch at Pho Vegan Asian Cuisine where I tried the super garlicy Salt and Pepper Vegan Shrimp dish and it was wonderful!
Miko had a new dog park adventure this weekend too meeting my mom and sister’s dogs at a different dog park.
This one had wood chip bark all over the ground instead of grass which he was not a fan of walking on or the adorable pug that wanted to be friends. And it was apparently more fun marking the obstacles than actually doing them.
Last night we stepped out to Revolutions Wines for another Sacramento Vegan Chef Challenge dining experience.
It was a great dining out experience because the patio was packed, but the socially distanced indoor tables were not and with all the windows open, it was a perfect way to enjoy cooling fall weather from a peaceful indoor table. We started with the Vegan Charcuterie plate with delicious carrot lox and Miyoko’s cheese for a fall treat. I got the Impossible Taco Salad and Ron got the Ziti Bolognese with Impossible burger too.
The Pan Pear Fritter dessert was a wonderful fall treat with perfect texture and blend for crunchy warm with creamy ice cream.
Today my sisters, mother, and I went to a paint party to paint these pumpkins and it was packed, sold out, because a lot of people needed a fun paint party! It was pretty socially distanced with everyone wearing masks and so nice to get into the fall spirit.
And picked up lunch to go from Loving Hut Vegan Cuisine after buying many random dishes to sample and share.
I wish we had a Loving Hut location closer to us because they have a huge and impressive menu, but the curry rice and Guru Curry vegetable dishes stood out with a nicely strong, but well done amount of curry. I am grateful for such a fun weekend with good company to change gears from all the heaviness going on and feel recharged for another week ahead. I hope this list helps recharge you.

It’s suddenly feeling like fall around here, too. There’s a cold snap right now and it’s actually 41 degrees outside! I didn’t even think that was possible in Texas! In any event, I’m glad you’re keeping warm with good eats out there!

Ok, the picture you snapped of Miko peeing is so dang funny! LOL. We are always trying to meet up with my mom’s dog and my in-laws dogs at dog parts, it’s working ok! Twix is finally leaving to play with other dogs. Always tough to break in rescues.

Haha, that was his idea of using the obstacles, lol! It’s a good social distancing meetup option, but Miko seems to be more of a people dog instead of a dog dog. :-)
