Thank you for the kind words for Miko. We have been adjusting to his medication and waiting for a second opinion appointment. And just trying to hope for the best. He has been such a sweet heart and acting like his usual energetic and happy self.
This has been an interesting week, we took a few days off for a fun camping trip to get away, so it was about simple healthy eats and busy days at work getting much done before the time off.
And spending time with Miko before spending some time with my mom, he had a few days of fun himself eating plenty and playing with her dog.
We headed to North Shore Campground in Chester, CA for a few days of camping where our campground was right on the shore.
Camping is tricky here, reservations are required months in advance for good campgrounds, especially this year since it seems to be the safest getaway option. We were able to get this reservation back in May and it was not a bad 3-hour drive to get there. But we got home this afternoon and are wiped after lots of playing outdoors and setting up and tearing down!
It was a gorgeous campground with the lake and mountains in the background and weather was perfect getting into the cool 50s at night. Eats were not that exciting, vegan mac n’ cheese, tempeh and asparagus, vegan hot dogs and carrots, etc. I was feeling pretty wiped leading up to the trip and did not get too creative packing food.
Oh, and beans and rice with summer squash! The views were such a nice change of pace.
And we got to break out our new toy – an inflatable stand up paddle board. The water conditions on the lake could not have been more perfect for it!
It was a fun trip, a little exhausting, and tough to get back to work tomorrow. But so nice to get away for a little fun this summer. Back to the usual routine this week, I hope you have a great week!

I’m definitely not into camping, but if I had you as an accomplice, I’d give it a shot! It looks like so much fun out there, beautiful weather, and of course fantastic eats. I’m glad you could take some time to unplug and enjoy the great outdoors.

There is such great camping areas in Northern CA! It’s not totally in my comfort zone, but we’re getting better at it.

Saying a little prayer for little Miko! So hard! But what an awesome camping trip, we are big paddle boarder people/kayak people here, too! I take a kayak ride almost every day just to revive my brain and to refresh. Looks like an amazing trip!

Thanks, they are family. So nice to get on a lake daily, lucky you! There are so many great options here too, already planning our next lake adventure.
