It’s Sunday, right? So hard to keep track now with my odd part work from home part work in office schedule and spending so much time at home. And this weekend has been tough with rain – not gonna complain because we always need rain here. But being stuck inside with frustrated dogs who refuse to go outside can be tricky!
I am still enjoying weeknight sunset runs, we’ve had gorgeous clouds this week.
Miko has been super sweet, but a little mopey with the weather. He gets so excited about going outside, then annoyed and runs back inside with the wind and rain.
We have been doing more takeout trying to support local vegan restaurants because it’s terrible what they’re going through. On the days I’m stuck going into the office is the perfect excuse to get takeout from Pho Vegan Asian Cuisine.
And trying to get more creative in the kitchen making a fun cauliflower protein pasta dish one night.
Spaghetti squash marinara another night and a huge salad with hemp seed dill dressing.
Hubby grabbed Parmela Creamery Nutcheese Alfredo sauce to try one night and served it with fettuccine and air fried Gardein Mini Crabless Cakes for a decadent combo.
I threw ginger, a carrot, miso paste, a tangerine, and peanut butter into the blender to make a fun stir fry sauce loaded with flavor that came out delicious.
There was also more takeout from Pho Vegan Asian Cuisine, Thai takeout, salad, and a kicky curry potato saute with chickpeas.
And hubby’s birthday was this week – what a time, right? Poor guy. I was really looking forward to taking him on a birthday getaway, but it will be awhile before that can happen. So we had a stay-at-home celebration with just us. Since going out to dinner was not an option, I picked up a decadent vegan cake from Pushkin’s Bakery.
Yes, that is solid chocolate on top and it was a wonderful treat. Other than that we’re just hanging here, working mostly from home and trying to get through this as I’m sure everyone is. Hopefully the list will inspire some fun time in the kitchen.

The days truly are burring into each other… It’s good and bad news because they’re flying by, but I feel like I’m wasting my life over here. The rain certainly doesn’t help. This tiny studio gets pretty claustrophobic when I can’t even sit outside on the patio to work, or take Luka for a walk…
Anyhow! Trying not to complain. I’m glad you’re trying to look on the bright side with so many delicious meals, too.

Yes and it’s so strange. I’m struggling a bit to find a routine and fun projects to work on. Our house gets tiny too, we need to get out for hikes this weekend.
Me too, trying to make the most of this time to slow down and re-focus on what’s important.

Who knows what day it is? Not me. LOL! I’m happy you’re all well and that you’re getting out for runs. I’ve been working out with instructors from my health club on Facebook, and it’s keeping me sane.
