How are you doing? Things just seem stranger and stranger here. We went shopping today at Target and Sprouts where employees were forced to police the 6′ floor markers, sterilizing shopping carts, and not being allowed to touch our reusable bags. I’m glad they’re being safe and taking steps to protect everyone, but it seems surreal. Still no TP to be found anywhere, or any paper products oddly.
Trying to maintain fitness routines has been a challenge without access to a gym, but I have discovered weeknight sunset runs are gorgeous especially after a rainy day.

And it’s a great opportunity to meet new friends, these sweet cows love coming up to the fence to greet visitors and more people in our neighborhood have been spending time visiting them since they’re stuck at home.

I see a lot of people using this time to get very creative in the kitchen and I’m hoping that bug hits me soon because I have not been feeling it yet as I still try to adjust to this new reality and routine. So eats this week have been simple tofu stir fries, kale salads with chickpeas, marinara spaghetti squash with textured vegetable protein, and more tofu tamari stir fries.

More salad with avocado ginger dressing, lentil and potato stew with vegan cheddar shreds, and cauliflower and cabbage tofu stir fries.

Healthier I guess, but lacking in the creativity department especially since I’ve been eating leftovers from these dishes for lunches.
Miko has been such a sweetie during all of this loving long walks and cuddle time.

Friday I decided to get takeout from our favorite local Thai restaurant since we could not eat in and it was a strange experience having to go into the sadly empty restaurant and awkwardly stand maintaining the 6 ft. distance rule while trying to figure out if our order was ready.

But it was nice to have those dishes at home and watch a comedy after such a strange week. Looking forward to supporting more local places offering takeout and wishing we could enjoy it with friends and family.
Tomorrow I’m heading back into the office to deploy more laptops and train a new team member, then work from home when possible this week. I hope you have a great week and this list helps.

Life is stranger than fiction, by far… It really is like a terrible movie plot that no one would be able to believe, and yet, it’s happening. Anyhow, glad you’re hanging in there and maintaining some scraps of a routine. That’s the only way to do it.

Surreal is the right word Christine! I still can’t figure out what is going on. Weird and weirder. My kids are so confused so to cheer them up I dyed their hair with Kool Aid today (I’d never let them drink the stuff, LOL). Trying to get creative in the kitchen too but the stress is wearing me down.
Yes, very weird! Now one of our grocery stores has huge plastic shields protecting the employees and everyone is supposed to be wearing masks now – crazy! How fun for your kids, I can’t imagine how scary this must be to them. Hang in there!
