Happy Sunday and how’s it going? I am contemplating going for a run, but it’s very windy here today which is my least favorite running condition. So maybe the home gym if the wind does not settle. It has been an interesting week here starting with a lot of job challenges. I am still adjusting to being a manager and will continue to adjust for awhile I think with the interesting things that can pop up from managing a team.
I will leave it at that and move on to sweet pups. Miko has been a sweet little cuddle friend this week loving his blanket snuggle time and being much more energetic and ready for play time and long walks after his recent dental appointment having bad teeth extracted. I’m grateful, but that makes me sad if he was in pain and we did not know about it before the appointment.
Leela has had a challenging week seemingly more disoriented with being blind and frustrated. She has been restless and wandering the house, but getting stuck in interesting places and freaking out. Last week I had to rescue her from behind the dryer and still not sure how she managed to wander into such a tight space.
Last night she stepped into her water dish to get back to dinner and didn’t seem to notice or mind. And yes, she makes of mess of her dinner every night, it’s quite a clean up job!
The Superbowl last week was a great game even though it did not end as we were hoping. Oh well. We had a fun party at my sister’s house with way too much food to snack on. My favorite was the this Vegan Southern Air Fried Soy Curls recipe because it’s so simple, oil free, and very much like a fried comfort food.
Other eats this week were my usual salads and oil free stir fries. And I wasn’t even great about snapping pics with so much else going on.
One challenge with our new work schedules is we don’t get to meet for lunch at some of our favorite local vegan places like Pho Vegan Asian Cuisine and Zest Kitchen. Sweet hubby has been trying to get takeout from them more for dinner to make up.
The veggie wrap and burrito from Zest Kitchen and hearty vegan wonton soup from Pho Vegan Asian Cuisine – yum! We also stepped out for spicy vegan Thai dishes.
And I’m catching up on chores and taking it easy today before another crazy week. So to the list!
- How to ditch single use plastic bags forever.
- Best vegan boxes of chocolate for Valentine’s day.
- H&M’s new eco vegan leather line sounds cool.
- The hidden biases of vegan hatred.
- Interesting new vegan bacon option coming.
- Yum, high-protein vegan cookies.
- The Oscars are going vegan too. Love this trend.
- Vegan energy ball recipes. Yum, need to start making those again.
- Going plant based has many wins.

I’m all about that soy curl recipe! I’ve had a bag in the pantry for ages and I really need to use it up. This looks fabulous, and I do love my air fryer, too.

That zest kitchen looks amazing. Our favorite is a vegan Thai place that makes the best satay soup.
I’ve been where you are with your fur babies. I know how much we can question ourselves. My Schnauzer had most of his teeth pulled out last year. My Miniature Pinscher was not able to get his teeth pulled as the sedative would interact with hormones because of an adrenal tumor he had and the chances of him dying were almost 100%. It was painful for me to think about him being in any pain.

Ah, such a fan of vegan Thai food!
So true with fur babies, watching them age and feeling responsible for their care and comfort can be tough.

Oh poor Leela stepping into the water bowl. My 16 year old doxy is disoriented, too. We went to an indoor bird park for the day so my neighbor had to walk to the dog and was so upset he could barely walk! I know…I feel bad too but other than being old, he’s pretty healthy. Busy here as well. Two kids birthdays and all the parties and their friends coming over. Yikes!
