It has been a weird, weird week that started with a bad Monday. Work was busy, then we had to evacuate early due to a brush fire nearby and strong winds which thankfully was not a problem. But fires are not taken lightly around here!
Then I was not able to get much work done from home because Leela was acting very strange having intestinal issues, very restless, seemingly in pain, and more disoriented that usual. I took her to the vet really worried it was something major with her age. Blood work showed it was an infection and after paying a hefty bill, we got sent home with antibiotics and her still being restless and unhappy for most of the night.
Apparently I was so stressed out after that day that I dropped a weight on my thumb in the gym bruising it and causing a split so bad I almost went in for stitches. How’s that for a Monday? And it set the tone for the rest of the week with thumb pain, Thanksgiving planning stress, and work stress. Thankfully the thumb is healing nicely, Leela is doing much better, Thanksgiving was a success, and I bought myself a treat for the winter – Women’s Elle Short Vegan Boots from Bearpaw.
I love that Bearpaw started offering a vegan line of boots and I hope they expand it. I know there are other higher end vegan options, but oddly not for my size. Before these I’ve been wearing a beaten up fabric cheap pair of vegan boots from the Animal Rescue Site for winter slippers. And while I’ve gotten my money’s worth from those over the years, I am thankful to have a more quality option that’s already rain-proofed with NeverWet Technology, good thing since it’s been raining heavily this week!
They are true to size, no need to order up, and very comfortable out of the box. I am looking forward to enjoying them more this winter!
Eats have been pretty simple this week preparing for Thanksgiving, lots of salad, simple stir fries, and takeout from Pho Vegan Asian Cuisine hubby sweetly picked up.
Hubby also found a fun treat for us to try from Sprouts Farmers Market – Hakuna Banana Dipped Banilla.
They are an interesting and delicious dessert of a frozen banana treat in the form of a chocolate covered ice cream bar, but slightly healthier. There are tasty chunks of banana inside with gooey and delicious sweet date paste – highly recommend!
Thanksgiving was a mellow event at my dad’s house with my sister and her family where hubby and I brought the Trader Joe’s vegan roast with vegan gravy for our main dish and made sure the rest of the sides were vegan for impressively loaded plates.
I really liked the Trader Joe’s vegan roast, it’s a great roast for the price and has a simpler list of ingredients compared to other roasts. My only minor complaint is it’s a bit saltier than I like.
We did goof on getting a vegan pumpkin pie – a few weeks ago at Sprouts we saw a great selection of vegan frozen pumpkin pies and cheesecakes, but did not grab one thinking they’d never sell out in our area. But they did. So I improvised the night before making this Vegan Pumpkin Pie recipe from Minimalist Baker using what we had on hand – rice flour instead of the gluten free blend of flour and sweetened soy milk when it calls for unsweetened. Oh well, it actually came out good for being our first time making pie crust from scratch.
It was a little lighter than a traditional pumpkin pie, but still delicious and a hit with non-vegan family.
We also got our Christmas Tree this weekend and most of the decorations up. Other than that, I have been lazy resting my thumb, cuddling dogs, and staying out of the rain since it has been cold and rainy.
The pups are happy to enjoy the fireplace again while we’re still using up leftovers and leftover ingredients from Thanksgiving and relaxing before heading back to work tomorrow. Hopefully it’s a great week for everyone and this list is a good way to start it.

Awww. I’m sorry about your Monday Christine! Sick doggie with a huge vet bill is no fun! Not to mention your own injury. I think I broke my foot running into a boot tray, yikes! Hope you feel better =)
