Wow, November already and this week has been hectic. Getting an extra hour this weekend was nice and needed for a little extra sleep. Last Sunday we took my dad out for his birthday to Il Fornaio where it was a nice surprise to see they’re labeling more vegan items on the menu and the Capellini al Pomodoro was delicious.

I have been into marinara sautes lately, just add marinara sauce to sauteed tofu/tempeh and veggies for a fast, but healthier, meal.

And salads too, the one above had soy curls I stir fried with curry powder and salt and pepper – very simple addition to make a salad a fun meal. Of course more simple, oil free stir fries.
I am a little sad October and Halloween is over, it was a fun but hectic month. We did a costume party at work where each department picked a themed booth to hand out candy and ours was video games this year.

Hubby did an awesome job carving a tiny face into our huge pumpkin this year and the trick-or-treaters loved it.
I have been glad to get myself to the gym more to deal with decadent eating and more stress this month and show off my collection of vegan gym tees too.
Friday night we stepped out to El Papagayo for dinner because they have such a great vegan menu with creative uses for tofu and other filling options.

I got the enchiladas with red sauce and tofu filling and hubby tried the vegan taquitos and loved them. So much great food for the money, whew!
We also stepped out to Pho Vegan Asian Cuisine for lunch where wonton soup hit the spot in our chillier weather.

And last night had a great family party at my sister’s house where I made a huge vegan taco salad – can never go wrong with taco bars at parties for all diet types.
And now it’s Sunday night were I’m a little bummed the weekend is over, but hoping for a good week and this great list will be a good start to it for you.

Yes, so many great combo possibilities! If Fornaio is great, not cheap, but classy and decent vegan options.
That tiny face on the pumpkin is so fun!!! Thanks for the great links. :)
Haha, thanks. Kids loved it too.
It’s still surprisingly tough to find nice vegan Italian options, so l Fornaio so quite a gem! I’m excited to see that they have so many locations nearby me too. I hope they’re all vegan-aware and -friendly.
It is, there is usually cheese and/or egg in pasta for many dishes. Il Fornaio is one of our go tos for family gatherings because they have decent options for everyone.
