Happy weekend, I am glad it is here and starting to feel like fall with temps in the 70s and 80s and breezy. It was a crazy busy week with my first as a manager and work probably will be busy for a bit learning, adjusting, working on new changes for the team, etc. That’s okay, I am enjoying the new challenges and embracing it. Last weekend we got up early and drove to Lake Tahoe to meet family for a rafting trip and the drive was gorgeous. I love that in just under a two hour drive, we can get to completely different scenery and climate. I picked up some Tahoe Trail Bars for the trip and snacked on one for breakfast on the road. It seemed like a smarter breakfast choice over a hydrating smoothie right before a long drive and the bars are delicious, like nutty, chocolaty, dessert bars that are not overly sweet. One bar was very satisfying for hours finishing the drive and for the first part of the rafting trip.
We packed two 6-people rafts with family and the weather was perfect, not too hot and the water was not too cold – rare in Tahoe! For about two hours, we rowed and navigated a few white water patches. The end was the final and most rough, I had to jump out to get the raft unstuck from a rock – haha!
It was a fun adventure and really nice to spend time with family and enjoy the outdoors. After we headed to Jake’s on the Lake for lunch where the patio lake views were gorgeous and the one labeled vegan option on the menu, the Vegan Falafelwich, was tasty! It was veggie sandwich with fried falafel patties for the bread served with an edamame salad.
After lunch, we walked to the beach nearby on the lake and check out how crowded it was! Not a surprise for Labor Day weekend, but whoa. When we had our share of crowds and sun, we started the drive home and got home in time to pick up Thai takeout and relax at home.
Monday my mom and I headed to Auburn for lunch at Nectar Cafe and to deliver my last folder for the Sacramento Vegan Chef Challenge. I got the Curry Tempeh Wrap loaded with veggies and a sweet and creamy curry sauce. Always delicious and I am looking forward to their creations for the vegan chef challenge.
Other eats this week include spicy tofu Thai dishes from our favorite local place, salads, and a delicious soy curl dish sauteed in marinara sauce with veggies and Trader Joe’s vegan mozzarella shreds melted in.
Yesterday was a draining day at work for both hubby and I, so we stepped out to Broderick for vegan burgers and beer. I was excited to see they expanded their vegan menu even adding new items to the seasonal menu and tried the Impostor Tacos which were delicious with a hearty vegan patty chopped up, corn, kicky sauce, and vegan cheese.
I just love that so many restaurants are adding more vegan options, it’s getting so much easier to find good food while eating out.
Today I am having a laid back day at home being on call for work and having a few issues going on and it’s nice to enjoy some down time before another busy week and savor this week’s list.

There really has never been a better time to be (or eat) vegan! That menu at Broderick really is the stuff of dreams. I literally want to eat every single dish. That alone might be worth a road trip!

Very true, so many great options and we’ve been getting a lot new restaurants eager to join the Vegan Chef Challenge which is great.

I love Tahoe! I’ve only been there in the winter to ski, and will hopefully get to visit in the summer to enjoy the lake and hiking. Looks like a beautiful trip.

Yes and this is a good trip to try it on with a little white water to make it fun, not enough to make it scary. :-)
