Miko gets terribly bored with me when I come home from work and work more in our home office, his sad look is truly heartbreaking.
And our evening walks have been very short the last couple of nights due to swarms of mosquitoes. Poor guy, but he was very ready to share dinner with me because we tried a new product – RightRice Spanish rice alternative made from vegetables.
Alternative pasta is so hot right now, using beans and other whole ingredients to increase the nutritional value and/or decrease the calories. Now there’s alternative rice made mostly from bean flour with a higher protein content while having a similar texture and flavor to traditional white rice.
It’s super simple to cook in a saucepan or even a wok, bring water to a boil and cook for 12 minutes. The Spanish rice is already packed with flavor and kick – so much I added in sauteed onion, peas, and tomato to make it a simple one-pot meal.
I found I did not need to add additional spice with the veggies, the seasonings were very strong with a spicy kick already.
White rice is delicious with it’s consistent texture, but not the greatest for nutritional value or fiber compared to whole rice. RightRice gives the comforting experience of white rice with more nutrient density and I’m looking forward to trying other flavors.

I’ve started seeing the RightRice all over and definitely want to try it. If nothing else than for the novelty factor, it would add some nice variety to the usual routine.
