Summer heat is back this week which means lazy and/or restless pups.
Leela is perfectly happy to sleep all day while Miko gets antsy and frustrated when it’s too hot to go for a walk outside.
I crave cool salads with this heat, lots of cool salads and smoothies. And had a ton of parsley to work through from our farm box and lemons from my sister’s tree which this simple dressing is perfect for.
Bright Parsley Dressing
- juice of one lemon
- bunch of fresh parsley
- 1 clove of garlic
- ½ cup shelled hemp seeds
- ¼ cup water
- 1 tbsp. Miso paste
- pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 4 servings.
