Bright Parsley Dressing

Summer heat is back this week which means lazy and/or restless pups.

Leela is perfectly happy to sleep all day while Miko gets antsy and frustrated when it’s too hot to go for a walk outside.

I crave cool salads with this heat, lots of cool salads and smoothies. And had a ton of parsley to work through from our farm box and lemons from my sister’s tree which this simple dressing is perfect for.

Bright Parsley Dressing

  • juice of one lemon
  • bunch of fresh parsley
  • 1 clove of garlic
  • ½ cup shelled hemp seeds
  • ¼ cup water
  • 1 tbsp. Miso paste
  • pepper to taste

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 4 servings.

It’s a simple list of ingredients that make a great summer blend of flavors and color.

And making a meal salad with chickpeas a satisfying treat.

The creamy texture from the blended hemp seeds coat perfectly.

And the bright and tangy garlic parsley flavors make it a lively summer dressing.

    Parsley is one of the few herbs I’m managing to keep alive right now. Fingers crossed I’ll have enough of it that I can actually make your dressing soon!

      Yes, mine too and it seems to last awhile in water in the fridge for me for easy salads.
