Smoky Summer Dressing

June 5, 2019 by christine

Summer is officially here, my car read 102 degrees outside leaving work today. Leela is not happy about the heat and prefers to sleep in thee AC all day. Miko does not seemed bothered at all and ready for warm lap time and blanket cuddles.

Hot dishes aren’t very appealing in this heat, but smoky and savory flavors are always great especially in a cool salad. This simple salad dressing is hemp seed based, no oil, rich, and creamy with a savory smoky. But on a cooling salad.

Smoky Tangy Dressing

  • ½ cup shelled hemp seeds
  • 1 tsp. liquid smoke
  • bunch of fresh parsley
  • 2 tbsp. apple cider vinegar
  • 1 tsp. onion powder
  • 1 clove of garlic
  • 1 tsp. smoked paprika
  • 2 tbsp. nutritional yeast
  • ½ cup water, as needed
  • salt and pepper to taste

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 4 servings.

The texture is smooth and rich making a fresh and healthy salad comforting. It also paired perfectly with sauerkraut mixed into the salad.

In this heat, we always have chilled watermelon to enjoy with meals and share with pups and it worked with this salad.

Creamy and refreshing while being smoky, savory, and delicious.

Stay cool and satisfied in the summer heat with this dressing.

Haha, I’m feeling that same struggle with my little lap warmer, Luka, over here! He really is sitting with me right now, as I try to keep the fans going to stay cool.

You had me at “smoky.” Love those savory flavors… Looks like another winner!

I could have sworn I left a comment already, but it seems to have gotten swallowed up by the WordPress demons… In any event, you had me at “smoky.” I can’t get enough of that rich, savory flavor.

Still waiting on that dressing cookbook (or at least ebook!) from you… ;)

You did, sorry. Spam filter decided to get picky. So try on the pups, Miko always wants to be in my lap or cuddled up in bed which can get hot! Thanks on the dressing and yes on the book, I need more time! :-)

Nice! It got a little cooler here for the weekend, but back to 90s and triple digits next week. Thanks on the dressing!
