Hope you’re having a great week. It’s been a little tricky to get back into work mode after a relaxing long weekend, but I’m getting there. I’m also getting back to healthier eating after weekend fun eating. One food you will always find in our pantry is raw shelled hemp seed. I love these! I use them to make emergency blender hemp milk, sprinkle onto salads and dog meals, shovel into smoothies, and make many creamy blender dressings and sauces with them.
This recipe is so simple and tasty it’s fun. Yet is has a strong and tangy flavor that pairs perfectly with a summer salad.
Simple Lemon Dressing
- 1/3 cup shelled hemp seeds
- 1 lemon, juiced
- 1 tsp. lemon zest
- 1 clove of garlic
- 1 tsp. Dijon mustard
- ¼ cup water, as needed
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 2-4 servings.
These ingredients are so simple to throw together in a blender and can be blended thicker for a tangy dip or add more liquid for a creamy dressing. Best of all, no oil or sugar.
It’s tangy with a refreshingly powerful lemon flavor that raw garlic and Dijon mustard complete nicely.
Salads can be exciting and fun while still being healthy with this dressing. It coated a kale, corn, and bean salad perfectly.
Because the dressing had raw garlic, Miko was a little bummed I wouldn’t share. But he got plenty of pepper and bean nibbles without it.

I do always have hemp seeds on hand too, but rarely think to use them. You just gave me a new reason to put them back into regular rotation!

I love hemp seeds and trying to use them more too. They’re great as a protein powder alternative in smoothies and in salads. And dressings of course. :-)
