Feels like it should be Friday, right? Miko agrees, he’s been a little frustrated with the rainy and freezing weather. We actually almost got snow yesterday which is pretty rare here. So Leela has been all about cuddling in blankets by the fireplace while Miko wants indoor toy-throwing sessions.
And lots of gym runs for me which isn’t too exciting, but I’m thankful for treadmill access when it’s miserably windy outside.
I had planned to have a new recipe, but that did not happen the last few days with it being so busy and me just barely having the energy to experiment in the kitchen after work. This black bean enchilada quinoa was a successful experiment.
I cooked a cup of quinoa, added a can of black beans, a can of cream-style corn, a can of diced tomatoes, chopped onions, and enchilada seasonings inspired by an enchilada sauce recipe I looked up quickly. It made a delicious and hearty dinner as well as easy lunches the last two days.
This was a more interesting experiment because I was running out of fresh veggies. I sauteed frozen green beans in a wok, added chopped tofu, chopped carrots, another can of organic diced tomatoes (on sale at Grocery Outlet), and a can of corn with Italian seasonings and topped with vegan parm.
Sure, adding corn was an odd choice, but it was also delicious for a throw together using stuff up.
But tonight I decided on a loaded salad with pinto beans, chickpeas, massaged kale, cabbage, and sauerkraut. For the dressing I blended an avocado, raw garlic clove, a chunk of fresh ginger, turmeric powder, and lemon juice for a simple tangy turmeric dressing.
It was delicious and very filling. The sauerkraut worked with the creamy dressing and it wasn’t too tangy.
I’m embarrassed to admit this, but I had an eye checkup today and it’s been 11 years since my last one. I know, but I wasn’t having any issues and kept putting it off. I decided it’s time to start going again now that I’m in my 40s. Interestingly, I was slightly far-sighted in my right eye 11 years ago, not enough for glasses, and now I’m less far-sighted. Weird, right? The doctor said that can change, but rarely less. Maybe going plant based? I like to think so.

I recently had an eye checkup too and was happy to learn that I still have 20/20 vision! It’s pretty remarkable considering the fact that everyone else in my family needs glasses to some degree. Go plant power! :)

Yes, I have an interesting mix in my family of one side needing glasses and the other getting away with drugstore cheaters in old age.

I had 20/20 vision until I turned 50, then I needed reading glasses because I couldn’t read the instructions on shampoo bottles. Now I need them to read my computer screen. It’s great that your vision improved!!

It will probably be similar for me, they already recommended computer glasses now because I work in IT and spend so much time in front of screens.
