Hello and happy Sunday. I am totally enjoying the extra hour and that it will be slightly lighter when I go to work tomorrow morning. Seriously, getting up for work in the cold and dark has been extra hard the last few weeks for some reason. Maybe I need to try one of those sunlight alarm clocks, have you tried them? Are you voting this week? I hope so and I already did by mail. I love that you can vote by mail in CA, it gives me plenty of time to research and think about all the props on the ballot and look into who’s really supporting them and why. It’s amazing how misleading and worthless political ads are! It’s been a quiet weekend as we settle into November after the Halloween excitement, sunsets are earlier and Miko prefers to stay in his warm blankets in the chilly mornings.
I have been picking up a lot of candy wrappers and found a lot of used glow bracelets and necklaces littered around on my dog walks and runs. Ah, Halloween. And I have a new gym tee I love thanks to hubby!
I’ve been getting back into sprouting this week to up my healthy eating game after so much fun last month and got reminded how delicious they are on salads. And they grow fast in about 4 days in a sprouting jar rinsing 2-3 times a day.
I also made a delicious turmeric tofu stir fry using veggie broth instead of oil. With The Vegan Chef Challenge being over, hubby and I returned to a favorite local Thai place for dinner Friday for one of my favorite dishes – pumpkin and tofu in a curry coconut sauce.
I also got back to Grocery Outlet for a little deal hunting, it’s 20% off wine week to load up for the holidays. I also found vegan Jackfruit flavors to try, Daiya cheese, bean snacks, and organic veggie broth for winter soups and stews.
And had a great brunch meeting at Veg Cafe with a large group of vegans to go over voting results for The Sacramento Vegan Chef Challenge and decide on categories and rewards.
I had the tofu scramble and potato hash which hit the spot because I was craving something savory, not sweet. But we also split a few chocolate crepes among the table, also tasty and nice not being too sweet. Sad the challenge is over, but many restaurants are keeping their vegan options on the menu from it which is awesome! There are so many great dining out options in this area now because of it and I’m looking forward to planning next year.

These are the best vegan restaurants in the US? I’ve only been to two of them and seems like Little Pine should be on this list.

I wish I could have enjoyed that extra hour, but alas, Luka doesn’t understand daylight savings time… That lovable little monster never lets me sleep in!
It’s official: Your Grocery Outlet is much better than mine. I was just there this weekend and found little if anything special. Boo!

Christine you are motivating me to start sprouting again! I think I forgot how much I enjoy sprouts on salads too, they are SO delicious! It’s sort of a fun activity too when it’s snowing out and there’s not much else to do.
