Miko loves his Lambchop toys so much I have to buy them in 3-packs to have backups on hand when one gets destroyed or is in the wash. He has a basket full of them that he loves to dig through and pick one for our evening toy throwing session.
I dug out an ingredient I haven’t used in awhile for this fun, healthier take on a classic dressing – peanut butter. I adore creamy salad dressings much more than oily or greasy ones, whole fat/veggie based dressings seem to add so much more to colorful salads. And the fun amount of tangy flare in this dressing is perfect for a huge meal salad.
Fun Thai Peanut Dressing
- 2 tbsp. peanut butter
- 2 tbsp. lime juice
- 2 tbsp. miso paste
- 2 tbsp. rice vinegar
- 1 tbsp. maple syrup
- ½” chunk of fresh ginger
- 1 tbsp. tahini
- 1 clove of garlic
- ¼ tsp. red pepper flakes (or to taste)
- ¼ cup water, as needed
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth texture. Serve and enjoy! Makes 4 servings.
Fresh ginger, garlic, miso, tahini, peanut butter and, well, this dressing is a tangy, kicky, and sweet party of flavors with a creamy texture perfect for coating.
And you can customize it by adding as much red pepper flakes as you like.
