Happy Earth Day! But really vegans treat every day like Earth Day, right? Today is also the big ECOS Earth Day Festival in Sacramento and the weather could not be more perfect – sunny and in the 80s. It’s a nice change since it was chilly this week with temps in the 30s in the morning, not spring-like at all and the pups snuggled in their car blanket on the morning ride to their play date before work.
In the past I have volunteered a lot for the festival usually with the Sacramento Electric Vehicle Society, showing electric cars, talking about being an electric car driver, and photography for the Sacramento Vegetarian Society. But, ugh, those were long days and tough to spend so much time on a weekend day after working all week. This year I’ll probably just be helping the Sacramento Vegetarian Society booth for an hour or so and walking around eating a lot since all the food is vegan – yum! And that’s nice after such a busy week!
I am glad this week is over, it was a busy, but productive week with hubby on business travel in San Diego. The lucky guy went to Cafe Gratitude while he was there! I’m jealous. He got the pulled mushroom sandwich and beautifully vibrant green juice.
The clean and bright atmosphere with a positive menu sounded wonderful, I can’t wait to check it out on our next trip to SoCal.
I got to Pho Vegan Asian Cuisine with my mom and sister once with week for the addicting eggplant tofu dish.
And to Zest Kitchen for lunch with my mom and other sister too, so my eats have not been too shabby I guess. :-)
I just love the veggie-loaded vegan quesadilla, it’s huge and very filling. But the veggie hummus wrap with rice paper is also a hearty, but lighter filling option for leaving room for the acai “cheese” cake for dessert. I also love the healthy eating inspiration board where guests can write about their inspiration for choosing a plant-based lifestyle.
I’m also on a potato and tofu kick lately, I impulse bought purple potatoes at the Sprouts Grand opening this week and got a more in our farm box. This simple tofu miso paste oil free stir fry with chopped purple potato, cauliflower, and kale can out beautifully and simple.
Simple chopped red potatoes worked well with this tamari, tofu, and spinach stir fry.
And leftovers from each dish were great re-heated for fast and healthy work lunches. Okay, to the list:

Happy Earth Day to you, too! A little late I guess. This year, the girls and I are celebrating by planting TONS of seeds of milkweed for the butterflies. We’ve read the bees and hummingbirds like it, too! Yippee Skippeee.

I went to the Berkeley Earth Day celebration yesterday which was nice, but a pretty small event. For the opportunity to see friends and enjoy great food though, I really can’t complain.

Haha, it’s true – not eating animal products is huge for the environment. Yes, I miss Cafe Gratitude and wish they were still in Northern California.
