12k Race and Birthday Eats for the List

Friday it rained all day, all day. So the pups decided to snuggle inside and stay dry.

I did manage to get them out for one walk and Miko protested the entire way, then pouted about being wet when we got home.

It’s been a week, but it was nice taking Friday off to spend the day at home catching up and doing a little deep cleaning, I could easily spend a few more days catching up on stuff at home. I scored at work this week getting to take home Chipotle leftovers after a catered training course and had a few lunches worth of brown rice, black beans, corn, salsa, and hot sauce for easy lunches.

And I batch cooked lentils to use in easy meals and dog meals, they were great in this messy cabbage salad with apples and dill sauerkraut.

And great simmered in marinara sauce to serve with steamed spaghetti squash.

We also celebrated hubby’s birthday this week at Il Fornaio with simple pasta dishes and a great bottle of wine.

The angel hair pasta with red sauce is such a simple dish, but one of my favorites for the perfect pasta texture and fresh tomatoes and garlic, yum.

And we finally made it back to Zest Kitchen for a healthier dinner last night, hubby got the chipotle tacos and I am obsessed with their veggie loaded wraps.

But the salted caramel brownie was an amazing splurge, highly recommend!

I was really on the fence about participating in the Run Rocklin race this year after crappy training, but impulsively registered for the 12k race yesterday and got myself to the start line at 8 AM this morning. I knew it wasn’t going to be a PR and possibly a disaster with a much hillier course than I’ve trained for, but it actually went pretty well. There were lots of brutal, long climbs.

But I maintained a pretty good pace for the entire course and felt good and even started feeling really good for the last mile as we were weaving downhill to the finish line. I decided to do it last minute to inspire myself to get more into training and tackling intense interval training to get my speed up more. Possibly another race next month, we’ll see!

    Great job on the race! Hills can be killer. The veggie wrap looks like it might burst open it has so much stuff in it.

    Happy Birthday to your husband! And that angel hair pasta will tomatoes and garlic looks SOOOOOO good!!! I’d eat that in about 2 seconds. And congrats on the Chipotle leftovers. Their fresh salsa is the best =) And their guac.

      The pasta dish is so simple and so amazing. Haha, thanks on the leftovers – never get tired of beans and rice especially as a vehicle for hot sauce.

    Happy belated Birthday! Sorry it’s been a bit of a washout on the weather front, but I’m also glad that we’re finally getting some spring showers in after such a dry winter. I’m trying to be grateful for that, as much as I crave the sun.

    Wowza, that salted caramel brownie is something else! Wish I could grab that recipe!

      Yes, the weather has been interesting – getting more rain now. But the hints of spring and sunny, warm days is exciting.

      The brownie was perfect, I need to find a recipe too! Or go back soon! :-)
