Stuff We Ate

I’m back with more stuff we ate, not a recipe, because it’s been a week. But I must admit the Super Bowl was better than I expected, I enjoyed the game more than the commercials and half time show this year. Seriously, what was Justin wearing? We had a fun dinner of Super Bowl themed vegan snacks – fries, chips, guacamole, salsa, great vegan sauces, and cauliflower buffalo “wings” and wow!

I used this Forks Over Knives recipe for Crispy Buffalo Cauliflower Bites, but altered it a bit when I saw a small package of almond flour was over $12! I used just brown rice flour and they came out great.

The texture was nicely crispy and gooey when tossed with the hot sauce while the cauliflower stems gave the bites a stringy and hearty texture. Excellent amount of heat without the grease and we’ll make them again soon.

I’ve already hit Pho Vegan Asian Cuisine for lunch once this week and it was fabulous.

The spicy Kung Pao Tofu is my current favorite dish there.

I also made a spicy curry quinoa dish for dinner with veggies because I am on a spicy kick this week.

Yesterday was a crazy day where I had to drive to one of our remote locations in the hills and was late getting back for lunch. I swung by Grocery Outlet to pick up a quick lunch to have at my desk of Amy’s Vegan Black Bean Enchiladas, Rhythm Kale Chips, and Farmhouse Culture Probiotic drink. Not exactly relaxing, but not bad either and all three together were cheaper than a sandwich from our cafeteria and way better – love Grocery Outlet.

By the time I got home after the gym last night, I was pretty tired and not feeling creative, so it was leftover buffalo cauliflower bites and roasted potatoes for dinner.

Not the best decision, but still tasty and fun!

    Hahaha. What was Justin wearing was right. My husband was just so happy the Patriots lost! And what a good eating week! Yum!!!!

      Me too, I wasn’t following a specific team – just tired of the Patriots winning – haha.

    You do not mess around with your game day eats! For that kind of spread, I could totally pretend to be a sports fan for a day. ;)

      Very true, hubby takes them seriously! :-) I recommend trying the cauliflower recipe and you could make it even better I bet.

    Finally! Someone who wasn’t thrilled with the half time show!! I love JT, but he danced more than he sang, and when he did sing, the snippets were so short that I just couldn’t get excited. The game on the other hand, now that was exciting!!!

      Haha, so true – songs were too brief and the fashion … ugh! Very true on the game, one of the best I’ve seen!

      Yes and I recommend trying them – simple to make and came out great even without the overpriced almond flour. :-)
