Whew, it has been a week and a crazy weekend! And I still have a lot to do which I’m thankful for. It’s been cold and foggy here too and the views from our morning dog walks have been gorgeous.
Miko’s idea of a good weekend is plenty of fireplace toasting, especially in the chilly evenings. He pouts if we don’t turn it on lately.
My eats have been very basic this week and I really need to go grocery chopping today. But this simple tempeh and cabbage stir fry was delicious.
Same for this curry sweet potato saute.
And another tempeh stir fry – working through a lot of cabbage this week!
And more cabbage with this miso soup with edamame protein spaghetti.
Hit the spot on a cold evening.
And using the empty fridge as an opportunity to eat up foods in the freezer, this Amy’s Light & Lean Quinoa & Black Beans bowl was delicious for under 300 calories, especially with hot sauce.
And we hit Pho Vegan Asian Cuisine for lunch one day for my favorite eggplant tofu dish.
And we had fantastic vegan sushi Friday night from a local place we have not been to in awhile.
After seeing this video from Dr. Greger, I decided to try Amla Powder to add into our smoothies a couple of times a week or so. I grabbed this package from Feel Good Organics and tried a tsp. in our smoothies this morning.
It didn’t seem to add any odd flavors and I barely noticed anything different, so thumbs up for using it as a supplement in smoothies.
Yesterday was a long and crazy day that started early at the gym, then raced home to shower and get ready for a long appointment at a car dealership. After 5 years, the lease on my electric vehicle was up without an option to buy or extend since it was kind of a test vehicle. So I was turning it in, test driving, and signing the lease on my next EV since I’m not ready to buy one and got another amazing deal on a test/compliance model for the next 3+ years. Once that wrapped up, it was home to relax with hubby before heading out to a Sacramento Vegetarian Society Board Meeting to discuss website changes and planning for the SacTown VegFest in 6 weeks. I left with a pretty long list of action items which is great, I’ve been wanting to get more involved with planning and promoting VegFest, social media, etc. I just need more time for these fun projects!
Then this morning I had to get up before 5am to get my sister to the start line of the California International Marathon since she’s running it this year. Then back home to get in a run myself, shower, and meet my other sister and mom to cheer her on at mile 21. As much as I wanted to run it again this year, but decided not to with my allergy breathing issues, it was nice to be a spectator while enjoying a soy latte from Starbucks.
I already put a lot of miles on my new EV this weekend, lol! So whew, it’s been a great weekend, but packed and I’m ready for a little down time this week I hope. I have a follow up doctor’s appointment tomorrow to further discuss my challenges after trying the inhaler and hoping that goes well with more answers with possible asthma or something else going on.

December is always such a blur of activity, it will be gone in a flash… Good to see that you’re still taking time to enjoy your fur babies by the fire. That, to me, is a real luxury these days. :)
