Jeez, another weekend went by too fast. The last week was long, stressful, and filled with drama as they usually are before the holidays and I’m a little burned out. Having a sweet lap buddy to watch Christmas movies with us has been great.
And getting a decent run outside this morning was good to blow off a little steam.
I’ll spare you the details, but I’ve been spending a lot of time helping family this week work through drama and have been coming home exhausted after long days and not great nights of sleep. So it’s been great to throw together simple veggie stir fries in the wok for fast meals with easy lunch leftovers the next day.
Lots of vibrant veggies and tofu this week.
And salads with tangy dressings.
Oh, and simple potato leek soup with vegan bacon bits and chives for a hearty and comforting meal.
Thursday was a very long day and sweet hubby had a lovely dinner ready with a quinoa rice blend, Gardein Mandarin Orange Crispy Chick’n, and steamed broccoli with spicy mustard.
We stepped out for spicy That basil tofu and rice Friday that hit the spot.
And I had lunch today at Pho Vegan Asian Cuisine with my mom and sisters to fuel up to start the car shopping process for my mom.
Still obsessed with the tofu eggplant dish – yum.
And I’m hoping that things get better and easier next week for some more creative time in the kitchen. I did get to a lot of website updates for the Sacramento Vegetarian Society and upcoming VegFest which felt great – still lots I want to do. Now I need to focus on finishing laundry and chores for week, but to the list first!

I liked it, the texture didn’t seem odd or off with the breading and glaze. Not something I have a lot, but fun once and awhile.
