Ready for Thanksgiving? We are, it will be simple and low-key at our house with my mom and experimenting with new recipes and products. And maybe decorating the house and getting a Christmas tree over the long weekend with lots of relaxing and another family party. Miko is ready for his play date tomorrow with my mom’s dog.
Not so much for Leela, she likes sleeping and cuddling into blankets lately.
As you know, I like healthy sauces that are packed with flavor for adding excitement to whole, plant based ingredients. And I’m obsessed with curry. But many curry sauces are packed with oil and sugar for the whole sweet and spicy thing which can negate the benefits of healthy ingredients. This sauce gets is playful sweetness and creamy texture from a banana, not sugar, oil, and/or cornstarch. And it packs spicy kick from red pepper flakes and loaded with savory flare from ginger and miso paste.
Better Curry Sauce
- 1 tbsp. curry powder
- 1 banana, peeled and chopped
- 1 clove of garlic
- 2 tbsp. miso paste
- 1 tsp. crushed red pepper flakes (or to taste)
- ½” chunk fresh ginger
- ½ cup coconut milk or water for lighter version, as needed
- salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 4 servings.
I used it to coat a veggie loaded tempeh stir fry and just look at that gorgeous golden color.
The texture is perfect for coating and adding creamy warmth to great ingredients.

Banana curry is one of those things that sounds so crazy that it just might work! I do love a good mango curry, so I can see how that same sweet and spicy approach might translate well. I’ll just have to see for myself!
Yes, it works well with the sweetness and texture for a light option to full fat coconut.
