It’s starting to get cold here with temps in the 40s in the morning which is blanket snuggle weather for Miko!
And soon it will be fireplace time which is Miko’s only favorite thing about winter. I am loving the signs of fall here, leaves are turning, pumpkins are everywhere, and I need to start bringing down the winter clothes to be ready for colder temps. And maybe do a little shopping for new vegan boots.
There have been a lot of eats this week starting with hubby’s tasty combo of a vegan grilled cheese sandwich with Imagine Organic Harvest Corn Creamy Vegan soup.
And we found a deal on this vegan Asian salad kit at Grocery Outlet.
So I turned it into a huge meal salad with added kale, chopped persimmons, and pinto beans.
Which Miko desperately wanted to share with me.
I used the rest of the corn soup with sauteed tamari collard greens and cabbage one night for a lazy dinner.
And made an interesting breakfast with smokey grits and potatoes since we’re trying to break from our smoothie rut more on the weekends.
This looks messy, but it was delicious. We had my mom over for dinner last weekend for her birthday and made this simple and healthy vegan mac n’ cheese recipe wich sauteed zucchini.
I also had a veggie loaded miso soup with ramen noodles and watermelon.
And a loaded salad with sprouts and chopped up veggie burger.
I also met my mom and sister for lunch at Pho Vegan Asian Cuisine for the mock curry “chicken”.
And we’re having a great time trying more creative menu items from the Sacramento Vegan Chef Challenge going on during the entire month of October and visited The Porch Friday night for their impressive menu.
We started with the Fried Green Tomatoes topped with tofu “feta” and vegan bacon served over their addictive vegan comeback sauce and greens.
The crunchy texture was perfect and amazing with the smokey “bacon” and sauce.
I got the black bean and walnut burger which was huge served with tons of fries and house made ketchup.
The burger was a little crumbly, but delicious black bean flavor with walnut chunks and fresh veggies.
Hubby got the tofu “fish fry” which was insanely good and decadent.
It had a hearty and crunchy outer layer served with jalapeno slaw.
And it’s been a lazy and off Sunday for me without an agenda. I went for a 4.5 mile run, been working on laundry and washing all of the pet beds and blankets for the winter, and other projects while opening up the house to enjoy the cool and breezy weather. A little bummed the weekend is almost over, why do they fly by so fast? But at least I’m not on call next week, so here’s the list.

Ok, I’m pretty sure I have that exact blanket for my doggies and they do the exact same thing. And before I forget, that black bean and walnut burger looks fantastic!!! Anyhow, say a little prayer for my doggie today, he now won’t use either back legs and is way to old to even consider surgery. I’m heartbroken for today =( I’ve had this guy longer than my marriage….

YUM! I love tofu fried “fish.” I have a recipe on the blog that my family loves. It may not be the healthiest way to eat tofu, but it’s SO good. :) Thanks for all of the great links.
