Better Peanut Dressing

Sweet Leela continues to mellow with age, she enjoys long naps after walks and pretty much most of the day.

She even lets Miko share her bed without protest now which would have been unacceptable not that long ago.

Miko wanted to share this dressing with me, but that wasn’t happening with sriracha in it! I am a fan of peanut dressing, I love the savory and tangy peanut flavor with spicy flare. Problem is most recipes for peanut dressings include multiple types of oil and sugar which isn’t awesome or needed for a great flavor. This recipe gets a hint of sweetness from a carrot and uses whole fats from natural peanut butter and raw tahini. And it has a heavenly thick and creamy texture with flavorful flare.

Better Peanut Dressing

  • 2 tbsp. peanut butter
  • 1 tbsp. tahini
  • 2 tbsp. rice wine vinegar
  • 2 tbsp. miso paste
  • 1 tsp. sriracha sauce
  • 2 tbsp. nutritional yeast
  • 1 small carrot, chopped
  • ¼ cup water, as needed

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.

Carrots blended into a dressing does a wonderful thing for the color and texture.

And really brought this shredded jicama and black eyed pea salad to life.

The peanut flavor is perfect blended with creamy tahini with a playful level of heat and sweetness.

Make a healthy salad a vibrant treat with this dressing.

    I love peanut dressing and finally had some last week (it came on my friend’s salad and she didn’t want it…weird…so I put it on my pasta!)
    This looks really good and simple to make. Can’t wait to try it :-)

      Nice and thanks! Me too, but the restaurant stuff is usually full of so much oil and sugar.
