I am still trying to get back to some sort of schedule for recipe creation, but it’s been tough the last few weeks with a lot of chaos. Oh well, soon. After insane triple digit heat and smoke over last weekend, it was in the 80s with a breeze today! We might actually get fall! Miko is ready for snugly evenings with the fireplace and warm blankets.
I went ahead and signed up for the 10-mile race this weekend to support my sister and it’s gonna be interesting because of smoke-related sinus problems I think, I’m regretting that decision after a congested run this evening. Haha, should be fun!
Eats have been interesting this week as I try to get to a healthier place, but life happens. I did great with this huge dinner salad the other night with chickpeas and a ginger hemp dressing.
And okay with this mock “fish” dish with broccoli and brown rice from Pho Vegan Asian Cuisine on a surprise lunch date with hubby.
Better with this simple tofu oil free stir fry and watermelon.
And tasty with a great noodle soup I made using Imagine Organic Miso Broth I scored from Grocery Outlet.
And some Explore Cuisine Organic Edamame Spaghetti scored from Costco to make a super fast and hearty soup.
So easy and fast! I just simmered a handful of the spaghetti in the broth in a wok and added veggies for a hearty meal soup.
Savory and delicious by itself or add all the hot sauce your heart desires.
Hubby has been having all kinds of fun with manly vegan comfort food this week starting with jalapeno loaded Lightlife Veggie Dogs for Labor Day.
And he remixed my vegan mac n’ cheese leftovers by sauteing with mushrooms and more jalapenos.
And made a mushroom topped “steak” using a Yves Vegan Burger served with loaded vegan mashed potatoes.
Lots of tasty vegan comfort food inspiration! And I am looking forward to some down time this weekend after the race to chill and catch up on more house projects while enjoying that it’s not too hot for a change.
Sauteing leftover mac and cheese with some veggies is something I never thought to do but I’ll have to try it next time.
It came out great, nicely spicy with mushroom flavors.
I’m all about miso soup- I make it at least 3 or 4 times a week! I’ll have to check out that miso broth if I can find it. Sounds like a tasty little shortcut.
Me too, so easy and delicious to make and GO had a great deal on miso broth and organic tofu last week that I loaded up on.

I am loving that watermelon!!! I need to get my fix with the end of the summer season. It’s been chilly here :-( I don’t like it because it means snow is around the bend!
Yes, I’m trying to enjoy as much watermelon as I can while it’s still available and cheap! Then I’ll be enjoying loads of winter squash. :-) Chilly sounds nice to me now, back in the 90s this weekend, but that’s better than 111!
