Simple Eats Inspiration

Leela and I seem to be on the same page this week after a quiet, hot weekend and back to the grind.

The heat hits her hard, so she enjoys more rest time. Not Miko, he’s ready for an indoor party with his stinky toy.

I gotta wash that again.

Eats have been interesting so far this week as I’m using stuff up from the pantry and excess basil. I had some Felicia Quinoa Pasta from Grocery Outlet that I used with simple tahini and hemp seed pesto for a fun dinner one night.

And had to use another Grocery Outlet find up – Explore Cuisine Soybean Noodle Soup.

Wasn’t a fan of the salty seasoning packets it came with and made miso veggie soup with the noodles instead.

There was this interesting lunch with my mom – salad, popcorn, watermelon, and nuts.

Kept it simple tonight after the gym and exhausting few days creating a veggie tofu oil free stir fry with a drizzle of Bragg’s Liquid Aminos.

Simple and filling.

And hoping the rest of the week goes smoothly for everyone!
