June is here and wow, still processing that. Leela is not sure she’s ready for walks in triple digit heat.
Summer also means loads of watermelon, fresh salads, and cooling smoothies. This summery dressing is bright and cooling with a poppy and tangy lemon flavor. Many lemon dressing recipes use sugar, salt, and oil for rich sweet and savory flavors which isn’t awesome for long term health goals. This version uses raw tahini for a whole fat, carrot for a slight sweetness, and miso paste for savory upping it’s health game and flavor profile. Also raw garlic, another health super star.
Summery Lemon Dressing
- ½ tsp. lemon zest
- 2 tbsp. lemon juice
- 4 tbsp. tahini
- 1 tsp. Dijon mustard
- 1 clove of garlic
- 1 tbsp. miso paste
- 1 carrot, rough chopped
- 2 tbsp. nutritional yeast
- ¼ cup water as needed
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 4 servings.
I’m such a fan of the golden color carrot adds to a blender sauce/dressing.
This salad is packed with pinto beans, romaine lettuce, cabbage, and apple for an interesting hearty meal blend that the strong flavors in the dressing work great with.
A little goes a longer way because it has a strong flavor making it a great light dressing too.
