I am slogging through this week our heat wave and it’s only Tuesday. My car was reading 112 degrees when I left work yesterday. Fun, right? When we were at Costco Saturday, we found a great deal on a 2-pack of Tekeya 40 oz insulated bottles – less than the retail price of one! And I’ve been lugging it everywhere with me loaded with ice water since which has helped.
It especially helped at the gym today making the intense treadmill run much better having freezing water to sip on.
Poor Leela had her all day teeth cleaning appointment at the vet yesterday and was very drugged up and out of it when I picked her up after. I felt so bad about the heat and plunked her in the cool car air conditioning right away.
I hate putting her through that and it gets scarier as she gets older, but she has problem teeth that can cause miserable health problems if I don’t stay on top of it. She was still tired and lethargic this morning and had me worried, but has perked up since. It seems to take longer to recover with her age, poor girl.
Cool salads and watermelon are perfect heat wave foods, so that was dinner last night. For the salad dressing, I tossed a carrot, raisins, spoonful of spicy curry paste, spoonful of tahini, miso paste, turmeric, ginger chunk, and nutritional yeast into the Vitamix and it came about great! Sweet, spicy, creamy, and rich.
Then had to share the watermelon with Miko, of course.
I also made a spicy Thai curry quinoa dish with veggies and lentils.
Instead of using full-fat coconut milk, I used lighter flax seed milk and it was still great – creamy and kicky with a lot less fat. I am addicted to this Prik Khing Curry Paste, a little bit goes a long way for sautes and adding spicy flare to blender sauces.
And tonight was another simple tofu oil free stir fry with veggies and citrus teriyaki sauce because simple is good this week.
Nothing super exciting, but getting through this week will be worth celebrating and our temps get back to the lower 90s next week. Woohoo!

Haha, some friends from our vegan group did that last year during a triple digit day. I need to try it!

Poor Leela. It’s so hard to watch our pups age, Gizmo is 12 and still has a lot of energy, but every once in a while he shows his age and it makes me sad.

Agreed and tougher with Leela’s eyesight loss, wish I could do more for that.
