It dawned on me that the 4th of July is almost here – whoa! I keep thinking summer is further and it’s pretty much here. I took the pups for a long walk yesterday trying out Leela’s new harness and she crashed for hours after.
Must have been a great walk! We had a quiet Memorial Day celebration here heading to Auburn for lunch at Nectar Cafe where the Santa Fe bowl was pretty awesome with beans, rice, veggies, and a kick.
Then walked to a nearby used book store for more summer reading.

Then to Whole Foods to load up on essentials for vegan burgers. I’m not a huge bun person, but I couldn’t resist grabbing Pretzilla Soft Pretzel Burger Buns when I saw the happy vegan logo on it.
We went all out grabbing Beyond Meat Beast Burgers, Sweet Earth Benevolent Bacon, and Follow Your Heart American Vegan slices. A splurge I rarely do, but it was delicious! For me the buns were the star of this burger, I’ve never tried pretzel buns before and the chewy and hearty texture was perfect.
But back to better eating for lunch today with leftover salad and roasted potatoes.
And air-popped popcorn spritzed with a mixture of tamari and apple cider vinegar.
By dinner I was feeling wiped after the gym and crazy day at work, so I sauteed simple chopped tempeh and veggies in just enough water to steam, then added Trader Joe’s Island Soyaki sauce.
This sauce is great to have around for simple meals because it’s low calorie per serving, sweetened with citrus juice, and packs a wonderful sweet and tangy flavor that’s surprisingly strong. Perfect for simple tofu or tempeh stir fries.
I will be focusing on keeping things healthier after our Memorial Day splurge for the rest of this week and simple – simple is good this week.

Don’t rush things now- It’s still just May! Time really is flying but I’m trying hard to savor every day. Otherwise, I’ll just get swept away with the tide and never be able to catch up.
That is one boss burger right there. Pretzel bund are the absolute best! I can never manage to actually make burgers out of them though, since I usually just eat them toasted and slathered with butter or avocado

Agreed – still trying to savor May and especially since it’s not too hot here.

Me too and the weather has been strange here too, we’re back in the 70s next week with rain which is very odd for this time of year.
