Trail Time for the List

Summer has arrived here this weekend with temps in the 90s and I’m enjoying shorts and sandals. And lots of salads like this monster I got with hubby at Whole Foods Friday.

There are falafel tots under there along with tasty marinated beans.

And more spicy Thai curry, of course.

Saturday we had a girls day shopping with my mom and sisters stopping for lunch at Pho Vegan Asian Cuisine first.

The curry mock chicken and rice hit the spot after an intense speed workout at the gym and before lots of shopping and walking.

And I kept it simple with this dinner salad last night since it was hot and a big salad just seemed so cool and refreshing.

This morning my sister and I headed to Folsom Lake for an easier and fun trail run, the hot weather didn’t bother me that much and it actually wasn’t crowded which was great!

The lake is full of debris currently after getting so low during last years drought and rising rapidly after all the winter rain, so not a lot of boaters or swimmers and perfect for mountain bikers and runners. I loaded my Nathan Airess pack with ice too and it was insulated enough to keep the water cool for the entire run.

After we split a package of Soul Sprout Cacao Almond Truffles which hubby sweetly gifted me with this week and they were delicious – not too sweet, slightly salty, and nice chocolate flavor and texture for a post-run treat.

Not a bad weekend and time for me to get serious about laundry and other chores for the week – ha! But first the list.

I love that we’re seeing more plant based programs in hospitals – about time!

    I’ve eaten the same salad for lunch everyday this past week. I don’t plan on stopping, it’s SO GOOD!

    We are supposedly getting our first Whole Foods here in Buffalo. Fingers crossed!!! Temps in the 90’s holy moly hot. Nice to be back on your blog, had a baby last week and was in the hospital a lot longer than expected!
