Running with Chickens for the List

Well, most of the time. But that’s progress! And I am feeling sleepy looking at that pic after a long day, but need to finish catching up on laundry for the week first. Allergies are better after I broke down and started using Flonase. I didn’t want to after never having to use anything like that before and held out for as long as I could. But the runny nose and extremely itchy and puffy eyes were making it too tough to function. A lot of people in this area including many from vegan groups are reporting first time allergy issues too and some friends suffering so bad they’ve had to get injections, there is something very different in the weather and climate this year after all the rain and climate change.

It’s been a week of good eats since I’ve been focusing on reducing my sodium intake a bit and sticking with more whole foods meals to try and improve running and deal with allergies. Plus I read less sodium and spicy foods can help with summer heat, so I’m preparing for that too.

Simple veggies with seasoned rice. Potatoes, chickpeas, and veggies, simmered in a curry coconut sauce. A loaded veggies salad from Whole Foods. And another simple oil free tofu and veggie stir fry.

Hubby got creative this week making loaded fish-less tacos using Gardein’s Crispy Fishless Filet and a spicy sriracha cabbage slaw for topping.

I made a spicy sriracha tofu cauliflower stir fry that Miko wanted to share and we stepped out for more spicy Thai dishes Friday.

When I was at Grocery Outlet last weekend, I found Explore Cuisine instant Soybean Noodle Soup for a price I couldn’t resist and grabbed a few for easy lunches. There’s a lot of protein in these little cups – 24 grams.

In the cup are the noodles and two seasoning packets – just blend, add water, and place in the microwave. The packets are too salty and peppery for me, I only needed about half of each. The “beef” flavor is not bad, it’s a savory and tasty broth. And the soup is a good foundation for adding fresh and/or frozen veggies for a fast one pot meal. The texture of the noodles are the same as their other soybean noodle products which I like, but it’s chewier than traditional pasta.

This morning my sister and I headed to Fair Oaks for the Fair Oaks Sun Run also called “The Chicken Run” because there are tons of chickens freely roaming Fair Oaks. And they’re very comfortable hanging out around people, they were not bothered by the race crowds.

This is the first year I’ve done this race as part of our 100-miles of races goal. Whoa, it was a hilly course – extremely hilly which is what it’s known for. They even had signs along to course with “fun” names for each hill like “Hernia Hill”, “The Beast”, and “Last Gasp”. Over half of the race was along very hilly trails near the river which was pretty and tough.

I had hoped to PR this race, but I got realistic after conquering the first hill and ended up doing really well in the top section of my age group. Not bad considering I’m a few months away from the next age group bracket – eek! And being on Flonase helped drastically with the symptoms that hit me hard during last weekend’s half marathon.

After the race we had a great time loading up on vegan post race snacks like Pop Chips, dark chocolate pistachio cherry bars, and Nature’s Bakery Bars. Also in the neighborhood was a fun craft show and sale and huge classic car show to check out. As well as visiting more chickens and adorable fluffy chicks.

It was a fun race for the chickens and scenery and I would consider doing it again. There was a 2-mile race and kids fun run too with lots of family activities, good event for the whole family to participate. And I will sleep well tonight after those hills!

    That race sounds like a blast! I love that chickens just roam free in that town. So fun! Good job in finishing in the top of your age group. :)

    I think I may have to start the Flonase as well. I had to stay home from work yesterday because my allergies were so bad and I couldn’t even think.

    I would have loved to do that chicken run! So fun!

      I didn’t want to use Flonase and held out for as long as I could, but it was too much of an issue at work for me too.

      Thanks on the run, it was great and will seriously consider next year.

    The scene is very peaceful. Feel like running and enjoying the scenery around, watching the chickens, and chickens everywhere, haha. I can not help laughing when I see the cute expression of your little dog, kkk
