I am so glad this week is almost over because I am still sick with this cold thing. It’s almost over – I hope, still stuffy with head and ear pressure and rain over the next few days probably won’t help. But steaming bowls of Imagine Foods Organic Red Bliss Potato Soup has been helping.
I snatched up a few of these from Grocery Outlet, they’re hearty, creamy, and low calorie. Delicious with a dash of liquid smoke and pepper.
I have not been feeling very inspired in the kitchen this week while getting through this cold, but this simple tofu saute was delicious with no-sugar BBQ sauce.
It was also hubby’s birthday this week and I hated not feeling great for it, so frustrating! But we did have a nice dinner out at Paul Martin’s American Grill.
I went vegan about 7 years ago (wow, has it been that long?!) and I remember there were no vegan only restaurants in this area at the time – we had to drive to Sacramento for those. Now there are four in this area! And a lot more restaurants with clearly labeled vegan options on the menu that didn’t have them just a few years ago. Like this creative warm quinoa bowl with grilled avocado and plenty of greens I got from Paul Martin’s.
It was light, yet savory and satisfying with half an avocado and perfectly steamed cauliflower. It’s such encouraging progress to see more plant based options and I just love how veganism has grown the last 7 years.

Thanks, getting there! We have been lucky with Grocery Outlet, but Sprouts has some great sales too.
