We’re trying the dog beds with built in cuddle hoods again because the blanket chaos with the chihuahua beds is getting a little crazy. Leela is still not sure she likes this or has not figured this concept out even though she has no problems burrowing into blankets.

Maybe I should feel guilty for being so obsessed with liquid smoke lately. Nah! Before taking off on a little adventure in SoCal, I needed to use up an avocado and other fresh goodies and for some reason obsessed with creating a new peppercorn dressing. Turns out a dash of liquid smoke, smoked paprika, and peppercorns can make a fabulous, kicky restaurant-style dressing without oil, cream, or sugar. This recipes has a strong, tangy flavor which was perfect for bringing a simple romaine salad to life.
Smoky Peppercorn Dressing
- 1 avocado, seeded and scooped
- ¼ cup apple cider vinegar
- 1 tsp. liquid smoke
- 1 tbsp. Dijon mustard
- 1 1/2 tsp. peppercorns
- 1/3 cup water, as needed
- Salt to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy, Makes 4 servings.

Again, this one has a strong fiery peppercorn flavor which I loved for a hearty meal salad.
It’s rich and seems much more decadent than a simple avocado-based dressing.
I can tell you that this one is a real winner without ever tasting it (although that will change ASAP). Between the avocado and the liquid smoke, you really can’t go wrong.

Fantastic! My brother was in town for the weekend and I made this to put over scallops and pasta. In the morning my brother put it on eggs and the next night we put it on chicken tacos. It does make a lot, but we didn’t have any problem finishing it before he left town.
