Hello and happy Sunday! I am feeling wiped after the Shamrock’n half marathon and enjoying sitting a bit before finding energy to walk dogs. The race recap is coming soon after I finish sorting pictures and resting. The week leading up to the half was jam-packed with work stress, but also great eats. Sweet hubby has been getting more creative in the kitchen and created a wonderful pasta dish with chopped up veggies in the Instant Pot using Felicia Organic Buckwheat Pasta and Sweet Earth Tuscan Savory Grounds.
It also produced enough leftovers to last through the week, the pups were mad we did not share.
There was also this simple salad with hummus dressing and steamed squash for lunch with my begging lap buddy who is quite the fan of kale.
And more salad with steamed artichokes.
Hubby also made delicious tacos last week with Lightlife Smart Grounds Mexican Crumbles.
And we hit Pho Vegan Asian Cuisine Friday for dinner.
Where I’m still addicted to the vegan wonton soup with yellow noodles.
I also scored some fun deals from Grocery Outlet, just yum of the dark chocolate quinoa bites and coconut snacks!
I had a simple pre-race lunch yesterday of quinoa and veggies seasoned with Trader Joe’s Chili Lime seasoning.
And dinner was Amy’s Organic veggie soup with more quinoa added and sourdough bread.
And I am wiped today after the race, getting up at the crack of dawn on the morning of spring forward is not fun! That threw my schedule off a bit and I might need a nap today and or am definitely going to bed early tonight. So to the list!

Very intrigued about the buckwheat pasta. I’ve had very mixed results when trying out alternative grain noodles, but I would certainly give it the benefit of the doubt, at least once. The good news is that these products are generally getting better- They’re already a world apart from the first experiments away from white wheat! It’s all good news. :)

Very true, mu luck has been hit of miss with some of the alternative pastas too. These had a slightly different texture, but flavor was good.

I love that your hubby helps in the kitchen…..I’m tempted to show this post to my husband to try and convince him. Now that I’ve seen a few marathons in Disney these past 2 weeks, I have even more respect for it! Tough. How do you do it? And then I got Scarlett Fever in Disney and strep, not too pleasant. Need comfort food now!

Me too, he’s getting more creative with veganizing his own dishes and it’s awesome! Haha, long races are a challenge, but possible with gradual training. Oh my, so sorry about getting sick – I hope you feel better soon!
