Sunshine for the Weekend List

Hello and happy Sunday! The weather is supposed to be perfect today, sunshine and temps in the 60s – can’t complain about that after last weekends storms! And I am still going through tons of pictures from yesterday’s SacTown VegFest that I will be posting soon. What an event – it was much bigger than last year, long lines at all the vendors and food booths, packed parking, etc. So encouraging to see so many people interested in this event and here’s just some of the loot I brought home.

I am such a fan of Alternative Baking Company cookies and they’re big enough for multiple servings and so chewy. Having a spicy jar of Nacheez is perfect for the big game coming up. And I can’t wait to try that insane peanut butter cookie sandwich from Sun Flour Baking Company.

It has been an interesting week with lots of stress at work and in the news, ugh. I’ve been trying to avoid the news part, but it’s just not easy. I’m noticing a lot of friends are taking breaks from social media just to get away from the negativity and I think I need to as well. At the same time, it constantly reminds me of the importance to focus on being positive and how much more of that needs to be shared and focus on being a joyful and vibrant representative of the compassionate vegan lifestyle. Get out there, be happy, and glow.

Eats this week have been interesting, I have been focusing on using up leftovers and items in the pantry and freezer to make room for a Costco shopping trip. I added leftover chopped roasted veggies to this salad with white bean hummus dressing and plenty of nutritional yeast.

I grabbed this Imagine Organic Sweet Potato soup at Grocery Outlet and got multiple lunch servings from it with simple sourdough bread.

I remixed Vegan Curry Yum leftovers with veggie broth and cooked zucchini for a spicy curry soup.

And sauteed chopped tofu and frozen veggies with a tahini ginger sauce and quinoa for a quinoa-crusted stir fry.

Tasty!

Hubby and I enjoyed the nice weather on the Whole Foods patio for a lunch salad.

Where I tried organic black radish in mine – mild radish flavor and a very tough texture.

I also tried the sesame tofu and vegan Cesar dressing which were okay.

Friday we headed to a local pizza place for a simple, but delicious vegan pizza loaded with veggies and an amazing sauce.

    Great links! I used to watch Dr. Oz (mostly at the gym like 5 years ago) and sort of thought he was full of it, but saw the value in his show. I am happy he is embracing plant based eating, I only hope people actually take it seriously…unlike many other things he recommends.

      Thanks and agreed on Dr. Oz, not a huge fan after all the scandals – but nice to see he’s promoting a plant based lifestyle and going in a better direction.

      Mine too, but I rarely see them too and usually only at vegan restaurants and veg events.

      The pizza was amazing! With the sauce and hearty veggies, did not miss vegan cheese or vegan meat on it. Don’t get too jealous on the weather, we’re heading into another week on rain here!
