It’s another soggy and windy weekend here and I have two very frustrated chihuahuas about not being able to go outside. Leela has been aimlessly wondering the house and Miko very happy to cuddle and play indoors.
We did get a break from the rain last weekend and I got in as many outdoor runs as I could. But I’ll be heading to the gym today for a long run and podcasts since the wind is just too awful.
I try to mix up vegan protein powders for our smoothies rotating different brands and flavors in the monthly Amazon Subscribe and Save shipments and this month I’m back to Orgain Creamy Chocolate Fudge. It does have a creamy texture that blends into smoothies with a lighter, whipped texture and a not-too-sweet chocolate flavor great for masking a variety of blended veggies in smoothies such as kale and broccoli.
Hubby surprised me with an amazing dinner one night this week – he made a fantastic vegan lasagna with roasted and grilled eggplant, zucchini, and whole wheat noodles.
He used Sweet Earth savory vegan grounds for the protein and it was delicious without vegan cheese, great textures, tangy and sweet tomato flavor, while being savory and hearty.
Crappy weather is a great excuse to go to Pho Vegan Asian Cuisine for noodle soup so that’s what we did Friday where hubby got his favorite “beef” broccoli dish and veggie wonton soup for me.
Other eats included roasted potatoes and kabocha squash in a garlic, apple cider, and tahini sauce and Amy’s Organic Black Bean Vegan Enchiladas for a hurried lunch at work.
Hubby made seasoned roasted green bean fries that were excellent and simple tofu veggie oil free stir fries, of course.
It has been an interesting week and I think I have the blahs from the weather, I’m ready for sunshine and outdoor fun. And maybe from work, last week was very busy with multiple people in our group out with the flu now and working on multiple projects. I think it’s time to plan another vacation! I have registered for more races in the next month, a Superbowl themed 10k and Valentine’s themed 4-miler before a half marathon in March and looking forward to good weather for training soon!

Leela gets so bored and frustrated when she can’t go outside.
That restaurant is awesome, I want to go more and there’s another one I want to visit more too – I need a bigger eating out budget!

Gotta say, that is some gorgeous zucchini you’ve got going on. Smart to break out the grill pan for these rainy days. You could almost pretend it was a summertime BBQ if you crank up the heat indoors! If the weather stays so gloomy, I may just try that myself.
