Thank you for the kind words about Smokey, it’s still a sad adjustment. And yesterday morning I had to go back to the vet for the chihuahua’s annual checkup and shots appointment I scheduled awhile back and forgot about. Not fun being back there so soon after and the pups were really not happy to go, but I wanted to get that taken care of and not reschedule it.
The pups are also unhappy this weekend about the storms with massive amounts of rain and wind, we’re not even leaving the house today it’s been so crazy. Lots of flood and strong wind warnings all day and I woke up early this morning to a massive down pour. Miko even refuses to step out to the covered patio!
And they’re both very frustrated about not going for our usual weekend long walks. And I’m frustrated about not being able to go for a run today!
I did get a longish run in at the gym yesterday in case the weather was too bad to leave the house today.
It was packed! I guess a lot of other people had the same idea with the storm warnings plus the New Year’s crowd. It’s been nice to stay home today and work through laundry and more de-cluttering projects, but I’m starting to get a little restless and looking forward to the rain letting up. I’ve been working through more of the Forks Over Knives Rouxbe program focusing on roasting veggies without oil. These carrots were roasted with a delicious tahini lemon sauce.
And braising veggies without oil – this cabbage bean dish was braised with veggie stock and cooking wine.
This ended up being a fun and tasty spaghetti squash dish.
I steamed half of a spaghetti squash, scooped the squash into a wok to saute with chopped tempeh and veggies in Trader Joe’s Sesame Citrus marinade sauce which was delicious.
Friday hubby and I stepped out for great local vegan Thai and I got my usual cashew tofu stir fry with brown rice.
And last night we stepped out with a group of vegan friends to see Hidden Figures, which was awesome, and go out to dinner. Only we planned to go to the sushi restaurant next to the theater, but the wait was just too insane for our large group and we ended up going to Pho Vegan Asian Cuisine instead.
I will never get tired of eating there! The service was fast for an unexpected large group and food great as usual. I got the mock “chicken” curry dish because I’m obsessed with the creamy curry sauce. And we had a great time chatting with friends and catching up and getting out before the big storm today.
Finally I have also been enjoying a recent Grocery Outlet find – Dark Chocolate covered Goji Bettires from Extreme Health USA.
They’re slightly sweet, chewy, tangy, chocolaty, organic, non-GMO, vegan, and delicious for a quick chocolate fix. I can see keeping a large stash of these around the house could be dangerous!

Awwww, hugs! Still so sorry about Smokey. We were just at the point (and it’s been 2 years) that we were ready to get another cat after loosing out Smokie. It’s such a sad adjustment and I feel your pain.
Those dark chocolate goji berries look fabulous!!!
