Fiery Peanut Dressing

The rain is back and so are some frustrated and bored chihuahuas. We got winds so strong last night, 60 MPH gusts, that poor hubby had to prop up another section of the fence and the pups will have nothing to do with going outside in that! Miko is pouting now too.

And constantly wants to play since the poor guy has so much energy. While poor Leela has just been mopey about not going for long walks.

I’m hoping we get some breaks in the rain this weekend for walks. Have I mentioned that I’m obsessed with dry sauteing? Adding flavor and texture by caramelizing veggies without adding oil and it works well for simple chopped onions.

Sauteed onions add great flavor and texture to salads without grease.

And this dressing adds a fiery and sweet flare with a warming creamy texture for a winter salad.

Fiery Peanut Dressing

  • ¼ cup peanut butter
  • 1 banana
  • 1” thick chunk of ginger
  • 2 tbsp. apple cider vinegar
  • 1 tbsp. miso paste
  • 2 tbsp. tamari sauce
  • ¼ cup non-dairy milk, as needed
  • sriracha sauce to taste

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy. Makes 4 servings.

I coated a hefty meal salad with pinto beans and sauteed onions in this dressing for a healthy and decadent dinner.

It adds a creamy and warming flare, slightly sweet with a kicky peanut flavor.

Salads can be satisfying even on a cold and rainy night.

    Peanut butter is absolutely the best! Love it. And your sautéed onions look fantastic. I could just eat those for breakfast alone. I will have to try this! I know my husband will gobble it down. 60 miles an hour winds, holy moly, that’s crazy!! My dogs won’t go outside in that either, they just pee in the house (thanks guys) Great recipe!

      Very true, such a great addition to so many recipes. Lol, me too on the onions. They are too harsh raw, but I love the flavor and texture they take on dry sauteed. Haha on the dogs, mine too or on the grass mat on the back patio.
