Keeping It Stress-Free

Wow on Christmas almost being here. For some reason I was feeling the stress earlier this week which is just silly, I know. But there’s a lot going on with work, projects outside of work, and Christmas planning. That mixed with just being busy in general the last few months and feeling the stress of others as we get closer to Christmas. I was in a funk and decided to take things extra easy this week and try to avoid any more stress. Our eats have been very easy this week, so easy it’s boring. But that’s good leading into a stressful holiday of rich eating.

First the pasta salad leftovers are finally done! I had the last serving at work yesterday having lunch at my desk while I worked on a web project for our local VegFest coming up.

Usually I leave the office for lunch, but avoiding the crazy holiday shopping traffic and getting a jump on this project was more appealing.

I am still working through a big batch of lentils I cooked for the week and sauteed them in a citrus sesame stir fry with tempeh and veggies for a quick dinner last night.

And had a simple lunch of leftover butternut squash chili today which tasted a lot better than it looked!

I also have a stash of Amy’s Organic Chunky Vegetable soup in our pantry, I stock up anytime I find Amy’s Organic vegan deals at Grocery Outlet.

And simmered it with more lentils for another easy dinner tonight.

It may not look exciting, but was delicious for a hearty winter dinner.

And hubby enjoyed one of his favorite simple dinners – Trader Joe’s Vegan Tikka Masala.

Okay, microwave meals are rarely a thing of beauty.

But this one is hearty, satisfying, and even better with Trader Joe’s Green Dragon hot sauce.

I know, not super exciting eats here. But I’ve embraced keeping it simple this week with everything else going on and the amount of time we’re going to spend in the kitchen over the weekend!

    I have been enjoying the meals I’ve created this week. I found a new cheese sauce made out of white beans and noosh and then a brown butter (EB) miso pasta that is TO DIE FOR! I’m also addicted to sauteing onions and garlic before making anything. Just delicious!

    Way to jazz up that vegetable soup! I have to say that I wasn’t terribly impressed with it last time I had a can, but it would definitely be a lot better with some heartier legumes and seasonings. Great idea!

      Thanks – yeah, the veggie soup is a little bland and light by itself, but makes a great flavorful veggie base for other dishes.

    I wish we had a Grocery Outlet in the Tri-State area but we don’t…sigh…heck…I have to drive 2 hours for a Trader Joes still!

      Hopefully you will soon! Our local Trader Joe’s, Whole Foods, and Costco are always packed because they serve such a large area. It’s gotten so bad that I won’t go on weekends anymore, but Grocery Outlet is rarely packed which I love!
