Just Chillin’ for the List

Happy Sunday, can you believe next weekend is Christmas?! December is flying by. Smokey is hanging in there, she likes to park it between me and the keyboard on weekend mornings when I’m in the office.

She is not as energetic as she was a few weeks ago, but does not seem to be in pain and loves to eat.

With temps in the 20s this weekend and lots of frost, Miko spent most of it in his favorite sleeping spot.

It was even cold enough for these two to share a bed peacefully.

Friday we had our office Christmas party/potluck and it was kind of a bust this year because the time got bumped earlier due to a scheduling conflict and a lot of people were out sick. I made a huge double batch of curried pasta salad, but it and other foods were barely touched since co-workers weren’t in the mood to eat a huge buffet at 10:30 am. But there was a decent selection of vegan options including a vegan salad, vegan seven layer dip another co-worker brought for me and fruit.

I still have tons of left over pasta salad that I’m not sure I’ll get through!

Friday night we found ourselves at Pho Vegan Asian Cuisine again, steamy hot noodle soup was calling me since it was freezing cold outside and poor hubby was dealing with the cold I had last week. I got the rice noodle veggie soup this time.

And hubby got the vegan “beef” noodle dish he coated with hot sauce.

I stopped running in my Altra Provision 2.5  shoes as it was getting closer to the marathon since adjusting to the zero-drop sole and toe box shape didn’t seem to be going smoothly, I figured I should stick with the Brooks Glycerin series I was used to. Yesterday I decided to try them again for an easy treadmill run at the gym.

The run seemed to go smoother than previous runs in them, but I felt a little more stress on one ankle and my calves felt more strained from the lower heel that is supposed to be good I think for stronger muscles. Plus I tend to curl my toes more in these which is odd since the roomier toe box is supposed to prevent that. I will keep them in the shoe rotation to see if I adjust better.

After the gym we headed to to Grocery Outlet for deal hunting and I grabbed a KeVita Pomegranate which was delicious – a little fizzy flare that was sweet, but not too sweet and low calorie.

Dinner was very simple last night, I heated up some of the leftover pasta salad and topped with nutritional yeast.

Tasty and I still have a lot left over!

Are you ready for Christmas? I mostly am, but feeling the Sunday blues a bit since it looks like it will be a busy week at work and I have website projects to complete for the Sacramento Vegetarian Society and our upcoming VegFest – should be fun, just could use some more time this week!

    20 degrees? Yikes! I’ll try not to complain about these chilly 35 degree days… But I gotta admit, I would still love to warm up with a bowl of that pho. It looks fantastic!

      Yes, the 20s is a bit chilly and lots of frost – the pups are not happy about it! And the soup is, my new cold weather favorite.

      Haha, thanks – they are my fur kids. :-) Me too on the KeVita drinks, always load up when I find them cheap.

    I can’t believe it gets that cold where you live! But I love your pets cozying up to the fire, mine are doing the exact same thing right now =)

      Yes, we get more of the temperature extremes in the valley.

    It’s been stupid cold in Chicago. Yesterday was -4 at 10:00 am. Thankfully we’re in for a warm up, but that means rain on Christmas day. All of the beautiful snow we have will melt and it will look so ugly. I can’t believe that I’m going to say that I’d rather have the cold with the snow. Have a Merry Christmas!

      Yikes, that is insane cold! I can image cold, rainy slush is not fun and snow would be much better! You have a Merry Christmas too!
