Hang in there, Friday is almost here. I’m ready, it’s been a stressful and emotionally draining week. With a marathon less for 4 weeks away (ack!!!!!) I am feeling the stress and strains of training and injury paranoia. And really focusing on cleaning up my eats more with whole starches, lots of fruits and veggies, and not going too crazy with protein. A simple shredded cabbage salad with chickpeas and hummus dressing fit the bill for a meal salad.
I simmered chopped tempeh in marinara sauce and topped steamed spaghetti squash for another simple dinner.
Something so comforting and satisfying about spaghetti squash.
I got a little experimental and sauteed cooked brown rice and chopped broccoli in a mixture of water, canned pumpkin, and tamari sauce.
And it was good, hearty with creamy fall flavors.
I also had this lunch salad topped with chilled quinoa and lentils and more hummus dressing.
Hubby sweetly made vegan pumpkin chili for dinner one night.
I also got this kicky Thai curry squash dish from Baagan for lunch today.
It was awesome with a little kick.
And kept things simple for dinner tonight with a tempeh and chopped potato oil-free stir fry.
The ingredients were so simple and dog friendly that I had to save a little for our plate cleaning service.
And that’s my simple post of eats after a draining week.

I’m right there with you.. a difficult week like this demands easy eats. I only wish I had spaghetti squash on hand already so I could whip that up for dinner tonight!
