Sweet Leela is a senior chihuahua who loves her long walks dearly, but crashes in a comfy bed for hours after.
After our super long walk last weekend, even Miko crashed for hours in his clean and comfy blanket.
I’m ready to crash after this week of working and training. It has not been an easy week at work, I was feeling so strung out today that I was really tempted to skip the gym and my training run. I didn’t, I convinced myself it will be a “fun” run where I could do whatever type of interval, pace, and hill training I felt like and not overly stress. And thankfully it ended up being a good run and weight session while catching up with This American Life and No Meat Athlete Radio. But I’ve been needing a little extra motivation the last couple of weeks with so much going on at work.
Smokey had a great week enjoying her fresh and clean drinking fountain thanks to hubby.
Both Miko and Smokey love drinking from it, Leela still refuses to try it and we have to keep a separate water bowl for her. Such a diva.
Sunday night we had another family gathering at my sister’s house where I enjoyed this massive colorful plate with salad, pasta, roasted sweet potatoes and squash and Gardein’s Fishless Filet.
The theme of the evening was seafood, so hubby and I brought vegan seafood to prepare and yes, the fishless fillets are total comfort food. But also delicious and I think I sold some family members on them as an alternative.
Last night I prepared another mild vegan comfort one pot meal in less than 15 minutes with Tofurky BBQ Slow Roasted Chick’n.
It’s a shredded chicken-like seitan that is thoroughly marinated in tangy BBQ sauce. By itself it has a great, meaty texture with a lot of flavor and could be great chilled in a salad. But I simmered it in more BBQ sauce with chopped carrots and cabbage in a little water instead of oil for a simple dinner.
Then had the leftovers for lunch heated over a mixture of cooked lentils and peas.
Yum, it’s a fun and versatile product that I would have again.
Finally, I was feeling drained and run down tonight when I got home from the gym and decided to keep it simple and healthy with a huge meal salad.
Organic greens, kidney beans, sweet peppers, tomatoes, and sauerkraut with a hummus dressing, nutritional yeast, and black pepper. Simple, maybe not exciting, but comfort food for me.

Good for you for getting your run in even though you were stressed. Running always makes me feel better. I need to try the Tofurkey BBQ, it looks good.

I still haven’t tried the Tofurky slow roasted chicken, but I’ve only heard good things so far. Plus, I’m a big fan of their other “meats”, so I really must seek it out, and she! Looks especially delicious in your recipe.
