Fun Finds for the Weekend List

Happy Sunday! Hopefully it’s been a great weekend so far for you. Yesterday, hubby and I headed to Grocery Outlet after the gym for fun deal surfing and there was a great vegan selection.

I scored these organic sun dried Turkish figs for cheap and they’re delicious!

And I had very decadent coffee this morning thanks to the deal I scored on New Barn Barista Almondmilk.

It’s sweetened and has more calories than regular almond milk, but thicker and more creamy – perfect for coffee.

Last night I created a simple quinoa veggie with with Saffron Road’s That Red Curry Simmer Sauce.

I cooked a big batch of plain quinoa, then simmered it in a wok with chopped kale, cabbage, and broccoli in the sauce for a simple one pot meal.

It was delicious – the sauce has a nice little quick, but isn’t very spicy and would be great with tofu or tempeh as well.

And I did my usual lazy weekend thing of making a huge salad for lunch Saturday with beans and hummus dressing.

And jazzed up the leftovers by topping with seed crackers and crispy fried jalapenos for lunch today.

Easy and healthy for a relaxing weekend.

Race training is going good, I had a nice 10.5 mile easy run today – the 1/2 mile is a bonus as I was only planning for 10 and went a little longer.

One more long run next weekend, then taper before the Urban Cow half marathon and keep chugging along into full marathon training. I had two decent tempo runs this week also and playing with increased speed training on the treadmill. So far so good!

    Oh fun, I had no idea that New Barn now has a barista-style milk! I never make myself fancy coffee drinks at home, but maybe I’d start to if I just had the right ingredients… It certainly is tempting to at least find out. ;)
