Classy Vegan Wallet & Light Spicy Peanut Dressing

Last week I got a fabulous surprise from Corature on Instagram, I had won a giveaway for any product on their site! It was such a fun treat in the middle of a hectic week and picking just one product was not easy! I ended up going with the Cork Clutch Purse Wristlet in Orange because I love big wallets that securely hold everything including my check book, stash of Tofurky coupons, and my collection of reward cards and partially used gift cards.

Finding stylish vegan eco-friendly accessories is not easy – I find as I embrace the vegan lifestyle more, faux vegan “leather” bothers me a bit, but fabric purses and wallets can lack professionalism. My other wallet is a huge, indestructible Haiku zip wallet made from recycled water bottles that I’ve been using for years. It’s functional and holds everything, but not exactly classy to pull out on a fancy evening. The Corature Cork wristlet is!

Cork is the new eco-friendly classy vegan leather and I think I need their matching iPhone case and purse to go with it.

I’m obsessed with the orange trim too, it works well with the cork and makes a fun fall fashion statement. This wallet will hold everything!

I love it, it feels so classy to use and think I need to get hubby a matching cork wallet too now.

And I recently found another variety of peanut powder to use while roaming T.J.Maxx – Tru-Nut Powdered Peanut Butter.

I always pick up a peanut powder bargain when I can because it’s so freaking good in smoothies as a low-fat alternative to peanut butter. But it’s also awesome as a lighter alternative in this spicy peanut dressing.

Spicy Light Peanut Dressing

  • ¼ cup peanut powder
  • ¼ tsp. red pepper flakes
  • 1 clove of garlic
  • ½” thick chunk of fresh ginger
  • 2 tbsp. tamari sauce
  • 1 green onion
  • ½ cup water, as needed

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.

The texture on this dressing is lighter and a little more runny which can be adjusted with less water. But I liked that it coated a large meal salad with a kicky peanut flavor easily.

A lot of traditional spicy peanut dressing recipes have both peanut butter and oil which is just a fat bomb for a healthy salad. This dressing has a creamy texture with a decadent spicy peanut buttery flavor without oil and full fat peanut butter.

The flavors paired well with organic greens and pinto beans for a filling dinner.

Poor Miko pouted about not being able to share, he still doesn’t understand that garlic is no good for dogs.

    It really is very difficult to find a good vegan wallet still. I ended up settling on some plastic affair recently, out of desperation, but I may just need to upgrade very soon based on how it’s wearing. I hadn’t known that cork could even be an option, so I’m excited to check it out.

      Very true, even the quality, non-leather looking ones can look, uh, youthful. The cork on this wallet seems very tough and surviving my abuse will be the ultimate test!

    Very nice wallet. I like good vegan leather, not the kind that looks and smells like plastic.

      Thanks and I have mixed feelings about good vegan leather because it still looks like leather and I think many assume it is. But it can also be more durable.
