Burning Through the Week

I am so glad this week is almost over and looking forward to sleeping well tonight since I haven’t been the last couple of nights with work stress and odd dreams. Miko has no problem getting comfy for a deep sleep.

I’m jealous this week! Running is going, I got a few good treadmill runs in this week mixing tempo, hill training, and easy intervals.

I wanted to get another run in, but decided to mix in an elliptical workout to rest a sore hip muscle. Thankfully we may be done with the triple digit heat here for awhile and long runs will get easier this month.

Still lots of simple salads with the hot weather. This Bush’s Best Sriracha Hummus mixed with tamari and apple cider vinegar made a great, simple dressing.

Perfect in a cooling salad with chickpeas and chopped green onions.

And there was this masterpiece salad I whipped up with a delicious throwback recipe – Avocado Ginger Dressing.

There was also this loaded salad with black beans and steamed spaghetti squash.

I am craving hot dishes here and there now that it’s not so hot outside, like this chopped broccoli and cauliflower simmered with kidney beans in marinara sauce.

And I simmered brown rice, pinto beans, summer squash and more veggies in a simple blend of curry paste and coconut milk.

It’s been a good week of eats, but I am wiped after another busy week at work and so ready for the weekend!

    Thank goodness the heat wave broke! It’s been in the low 90s here, I can’t imagine triple digits. Miko is so sweet. :)

    Preach it sister! I sometimes crave the tastes of hot dishes…so I just eat them cold ;-) Cold chili is actually really good!

      That is very true, chilled grains and bean dishes are great mixed in with salads!

    I’m with ya on the end of a long week and hoping to rest well. If I remember correctly, we’re both in IT. I think it must be in the air that it’s even more stressful than normal lately!

    I love your salads! And how your dressing are always so creative. I still make an old one of yours regularly that has hemp seeds and balsamic vinegar!

      Very true, we have a lot of upgrade projects going on which summer seems to be popular for in IT.

    Maybe I will recommend to my inlaws to steam their spaghetti squash. They were asking how I cook it and I usually roast it one night then make a casserole with it. I am not a big fan of it. Tonight I am trying a yakisoba spaghetti squash stir fry.

      Steaming it works for me, it can be done in the microwave or oven in a baking dish with water. Yum, I need to try adding it to a stir fry too!
