It’s Thursday, been a busy week, and was a high on 106 today. Even treadmill running after work in an air conditioned gym is brutal in this heat, I felt it dragging today. It’s builds endurance, right? But Friday is almost here! Miko is ready and he’s always ready to chill with us watching TV.
I am so glad I discovered JackRabbit.com because marathon training tends to go through a lot of running shoes! Brooks Glycerin 13s are still my favorite running shoes and the 14s recently came out which means great deals on the 13s and JackRabbit has the best prices I’ve found so far, I got two more pairs of the 13s for less than one pair on the 14s, so I have four pairs to rotate between with my increased number of runs.
The shoe tracking feature in Runkeeper makes it easy to track miles on all of them at once. I’m sure I’ll be buying more compression running pants and socks from JackRabbit as training gets serious in a few months.
In March, I found a mostly used bag of organic potatoes in our pantry that were starting to sprout. I chopped them into quarters and stuck them into one of our garden beds. They bloomed into pretty green plants that died off last month. Since potatoes are supposed to ready for harvest four months later, I started digging around that bed and found tons of little potatoes ready to go!
I kept it simple by chopping them up and simmering in veggie broth with a lentil blend and chopped zucchini seasoned with Lawry’s Seasoned Salt, nutritional yeast, and pepper.
It was delicious! Very rich and hearty and the potatoes had a wonderful texture.
Later this week, I also scored summer squash from our garden.
They were great in another simple weeknight dinner. I just chopped them up, simmered with Field Roast Vegan Italian Sausage, tomatoes from our AeroGarden, and seasoned with thyme, garlic powder, and salt and pepper.
Simple and vibrant summer meal.
I’m not exactly a gardening pro, in fact I’ve barely had any time to maintain our garden this summer and thankful for what I can get out of it this year. But I love getting fresh fruits and veggies right from the backyard and dream of turning a large chunk of our yard into one huge garden one day.
And, as you can probably tell, I’m a bit fried this week. So thankful Friday is almost here and hope everyone has vibrant veggies to enjoy!

Those are some serious squash! It would take a miracle for me to grow such perfect specimen… I definitely do not have a green thumb, nor enough rain to make up for my forgetfulness out here. It’s inspiring to see what you’re harvesting, though.

106! Yikes! I’ve run on the treadmill twice this summer because of the heat and humidity and I hated every second of it. Treadmills don’t like my knees. Love what you did with the summer squash, I have a ton in my garden and you gave me a great idea. Thanks!
