Simple & Chill Eats

Happy almost Friday and I am grateful the weekend is almost here. I’m also grateful for my sweet hubby for always being such an amazing person. I’ve been focusing on a lot of positives this week with so much craziness. I knew it’s been coming for awhile and I’ve been putting it off for as long as I can, but I think I will finally have to move to a new host this weekend and will apologize now if things get a little glitchy during that process.

The pups have been so cute this week very happy to see us when we get home and enjoying lots of cuddle time. But they weren’t feeling very photogenic tonight!

And maybe this simple tamari tofu oil free stir fry isn’t either, but it was delicious for being ready in minutes.

I ventured to Costco after work yesterday to load up and was thrilled to find a huge variety package of Field Roast Vegan Sausage – 12 protein loaded sausages for under $14 which will last us weeks.

And the Smoked Apple Sage was delicious in this saute with tofu, onions, zucchini, and carrots.

While at Whole Foods last weekend, I grabbed a cheap can of organic spicy black beans.

And found organic riced cauliflower stashed in my freezer from Trader Joe’s.

I sauteed the two together in a wok with spicy salsa, chopped potatoes I needed to use up, and kale for an awesome simple dinner!

It really did taste like a spicy beans and rice dish with more veggies mixed it and was very filling. Next time I’m stocking up on those spicy black beans because they had just the right amount of kick perfect for blending into simple dishes.

Anyway, I hope everyone is doing okay this week and just wanted to say I’m thankful for you, for those passionate about a compassionate and loving lifestyle.

    I still can’t believe that I haven’t tried Field Roast yet! I was just at my Costco earlier this week. Maybe I didn’t look closely enough – or CA has cooler stuff than VA!

      I know, I was so excited to see it at Trader Joe’s and it’s so easy to add to soups and other dishes to make more hearty.
