Fast, Creative Eats

The Pebble Health app has been updated with an attitude, it gets snarky at the end of the day if I’m just below my usual step count asking if it was a rest day or was I stuck inside. Pfft! It’s all fun and I like seeing these updates from it.

And the sweet pups love seeing us come home after a long day and they love getting dinner. But we send to the backyard first to do their doggy business and Miko does his happy dinner dance when he’s ready to come back in.

I’ve had some interesting dinners this week getting creative with various Grocery Outlet finds. I took a can of organic vegan lentil soup and simmered it with steamed spaghetti squash and added garlic and oregano seasoning to make it a hearty meal. It was, uh, odd looking.

But very tasty and filling.

And prepared this Ancient Harvest Spicy Curry quinoa blend with a can of organic kidney beans and a blend of frozen organic veggies for a simple one pot meal.

It was colorful and hearty with a nicely kicky curry flavor.

And the leftovers were great chilled over salad greens.

There was also this simple tofu oil free stir fry with green beans and onions.

Fun, filling, and a nice sriracha kick for a simple dinner ready in 10 minutes.

I had to share, Miko is a huge fan of green beans, he snapped them from my hand faster than I could get a picture!

So happy the weekend is almost here! I’ll be working on house stuff and maybe going to a health fair.

    Great time for your run! And great eats. I’ll keep an eye out for that curry. I enjoy Ancient Harvest products.

    I had my first race in forever yesterday. It was a all women’s 10k in central park. I didn’t really do any training for it and I’m hurting today but I was happy I even finished. :)
