Summer is here with temps in the 90s this week. Ack, already?! Smokey is perfectly happy to soak up the warm sunshine.
Leela was not perfectly happy yesterday and decided to pout under the coffee table for some reason.
I get it, I have those days weeks too and this might be one of them with tons going on at work, on call for work, and other stresses. When things get crazy, I try to take the opportunity to focus of keeping meals less crazy and more healthy. This salad dressing recipe is a perfect super food addition to any veggie loaded salad with raw garlic, apple cider vinegar, hemp seeds, and fresh rosemary. It has a strong tangy and bright herb flavor perfect for a vibrant salad.
Super Herb Dressing
- ¼ cup shelled hemp seeds
- 3 tbsp. apple cider vinegar
- 2 tbsp. Dijon mustard
- 1 clove of garlic
- 3 sprigs of fresh rosemary
- 3 tbsp. nutritional yeast
- ½ cup water, as needed for desired thickness
- Salt and pepper to taste
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Serve and enjoy! Makes 2-4 servings.
The dressing came out creamy, but more runny than my thicker dressing recipes which was perfect for spreading over delicate greens.
It has a nice garlic kick, warming and bright rosemary flavor with a playful tangy pop that worked so well with a hearty salad.
