Keeping It Simple

Mondays can be tough around here and yesterday morning was very tough for Leela, she did not want to leave her cozy office bed for a walk.

I don’t blame her, I wasn’t feeling heading into work either! But I packed a smoothie and motivated myself into the office.

And have been trying to eat well this week after a bad run Sunday and feeling tired with a sinus headache. Did I catch something or are allergies so bad this year they’re getting to me too? Who knows. But this salad with a simple Trader Joe’s rice blend made a healthy work lunch.

And another salad today with hummus dressing, plenty of nutritional yeast, and pumpkin seeds.

Tonight was a simple after gym go to dinner for me of chopped tofu and veggies simmered in Trader Joe’s Organic Marinara sauce and topped with a hemp seed “parm” mixture.

I have been having fun creating simple meals with cheap finds from Grocery Outlet this week. I’m still obsessed with Grocery Outlet for being able to find fun new vegan products to try like these Explore Asian Organic Brown Rice Udon noodles.

I like that they come in individual serving bunches making it easy to cook just one or two servings at a time. I cooked them per the instructions then added to a broth I whipped up in the Vitamix of tahini, miso paste, garlic, and ginger and added veggies for a fast, homemade udon noodle soup.

I also found a package of Tribe Salsa Hummus Swirl which made a great salad dressing when a spoonful was whisked with lemon juice, nutritional yeast, tamari, and water.

And used Native Forest Organic Coconut Milk to create a quick curry stir fry with black beans and sweet potatoes.

I also scored a box of Nature’s Path Qi’a Roasted Peanut Dark Chocolate bars.

These are a delicious and hearty treat for only 190 calories and perfect size to keep on hand for emergencies.

I had a decent run at the gym tonight even though I was feeling a little tired and sore from Sunday’s off run and got in 3.6 miles in 30 minutes, not bad! And I felt much better after!

Feetures! Elite socks are my current favorite running socks that have not let me down with blisters or problems yet. I just have to remember to put them on the correct feet since they’re fitted for left and right!

    I LOVE LOVE LOVE that salsa hummus! We had a few days off and did a few days trips – yesterday we stayed local and went out for a bit and then spent the rest of the day at home…the pups LOVED it!

      Me too, it’s really tasty with veggies too! And I love down days at home, feel like I need one now!

    Believe it or not, but I’ve never made Udon noodles. I always see them but somehow never buy. I’ll have to change that. My favorite socks happen to be Adidas socks from Costco lol! I love them!

      That was my first time making it at home too and I just kind of “free handed” the broth after skimming recipes. It turned out really good and simple to whip up.

    I love Tribe but haven’t been lucky enough to find their salsa swirl variety yet. I’ve had the red pepper one though, and since I haven’t tried a single flavor that I haven’t enjoyed, I’m sure I would love this one too! I’ll have to keep my eyes peeled next time I’m out shopping.

      That was my first time trying swirl, I had no idea it existed before. Hopefully I’ll see more flavors at Grocery Outlet! I once tried a chocolate flavored hummus that was not great, it was nut sweet enough and gritty.

    I love Balega socks! They are my choice sock. They are a bit thicker than feetures and I enjoy that. I need a barrier between the hard creases of my shoe and my foot. No blisters please! I hope you kick your cold this week :-)

      Hmmm. maybe I need to try Balega socks too for colder weather running here. I tried thicker running Therlos and they were too thick for me causing problems on long runs.

    I need to try those socks! I’ve been getting terrible blisters lately, and nothing seems to work. I have used so much of that anti-chafing cream on my feet that I though I’d need to start buying it in bulk!

      Ugh, I hate it when socks fail! Most socks are okay for short runs, but I am so picky for distance running! Feetures! are nicely thin with a firm level of compression mid foot so they do not shift for me. A little bit of a pain to put on, but worth it.
