Great Sushi & Cheap Bananas for the Weekend List

Happy Sunday! I’m having a quiet morning with two lazy chihuahuas in the office and trying to motivate myself for a run after a long week. Smokey has been having a lazy weekend claiming both fuzzy blankets on the couch.

And Miko would like more toy throwing time.

We stepped over to Grocery Outlet after the gym yesterday where I seriously scored on cheap ripe bananas! They even had a nice selection of organic bananas and large bags of them for $1 for quick sale.

I bought as much as I could fit into the freezer, so we’re stocked for smoothies for awhile!

Friday night we stepped out to a local sushi place that I love because even though they don’t have any vegan rolls on the menu, they are amazing at making unique, custom vegan roll on request that have been a different and fun adventure each time.

I really liked the tempura asparagus avocado roll topped with lemon – it was tangy, hearty, creamy, and delicious. Maybe if we keep requesting vegan rolls, they’ll finally put some of these amazing creations on the menu.

There has also been a lot of salad this week – always. This is an interesting blend of kale, broccoli, shredded veggies, and sweet peppers with hummus dressing.

And a huge, messy romaine salad with tahini apple cider vinegar dressing.

I’ve also been working through a bag of small potatoes this week and created a simple oil free potato tofu stir fry with tamari and sriracha.

And huge coconut curry potato stew I simmered in a wok with bok choy that was delicious and hearty.

Potatoes are so simple and fast simply chopped into chunks and simmered in a wok with water or veggie broth, the chunks cook in minutes for a fast and versatile one pot meal. Fast and easy is what I needed with a busy week. And this week’s list is a fun collection I threw together with what time I had for reading.

    I think I needed these pet photo’s today because I’m having just a crappy week. And the potatoes, the ultimate comfort food =) Potatoes truly make life better.

    I love banana sales! I would have grabbed as many that would fit in my freezer too. :)

    I can’t even tell you how happy I am about the vegan Baileys! Every St. Patty’s day I say I’m going to make a vegan version and never get around to doing it. Now I don’t have to yay.

    Very excited to see vegans being portrayed as fit and sexy rather than sick and unhealthy.

      Me too, I wish I could have fit more in our freezer!

      That is exciting about vegan Bailey’s and a positive sign of the times, nice having that option for holidays and parties!

      Me too about the image of vegans, I have co-workers that still believe people will starve without meat even though I’ve been vegan for over 6 years now!
